📌 Ingredients:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1 jalapeño, diced & seeded
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (20oz) diced tomatoes
32 oz chicken broth
1/2 tsp cumin
1/2 tsp chili powder
Salt and pepper to taste
1/4 cup fresh cilantro, chopped (for garnish)
1/2 tsp lime juice
Tortilla strips (for topping)
📖 Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the diced onion, garlic & jalapeño and cook veggies for about 15 minutes or until soften.
2. Add in chicken breasts, corn, beans, seasonings, crushed tomatoes, cilantro & chicken broth. Bring it a boil.
3. Once boiling, let it simmer for 25 mins
4. Using 2 forks, shred the chicken inside the pot.
5. Let the soup simmer for an additional 10 minutes.
6. Add in some lime juice for some flavoring.
Serve hot, garnished with fresh cilantro, lime wedges, and crispy tortilla strips. 🍲
