Please try this recipe and send me your feedback. A comment with kind and decent words is always greatly appreciated. Thanks 🙏🏾. Vindaloo created in the Portuguese - Indian colony Of Goa, were generally made with pork. Vindaloo got its name from the Portuguese words for their most important seasonings, wine (vinho - in this case wine vinegar) and garlic (alhos). Vindaloo is a combination of many aromatic spices and the use of vinegar along with these spices acts like a pickling preservative. It is quite a spicy hot dish but you can definitely use less chillies and make it mild. Please do try this recipe and do leave a comment as I love reading all your comments. Thanks for watching 🙏🏾 🎬Related videos - 🎬Chicken Recipes - ru-vid.com/group/PLxgPEcdhkY4FjUhw6zc7nVQs2SkGSO41Q
I like to add big pieces of cauliflower to this, and although not traditional, I also add a can of roma tomatoes to thin out the heat a little bit, and a few potato chunks. I wanted something authentic besides using the jarred paste and this is it. also, is it traditional or ever done to add a bit of vinegar right at the end before serving? seems like I saw that somewhere. to brighten it up?
@@fredgarv79 you can definitely add potatoes. Potatoes taste delicious in any type of curry. Adding vinegar at the end is a matter of choice and individual preference. According to me do what you think is best for you and works out for you. A recipe is just a guide. Thanks a lot for your feedback. Really appreciate it.
@@CurriesWithBumbi I read other recipes but I really like your method of browning the onions first, then adding the paste back into the onions and browning it all a bit. caramelizing it. then later add your water etc. (another recipe I saw used raw red onions and marinated them with the chicken. no browning. I think yours is much better) I added chicken stock and some tomato sauce then slow cook it. Do Indian recipes use zucchini at all? I was going to add some zucchini but forgot to do it. seems like that might absorb the sauce nicely. I like to make my own keema samosas with lamb carrots and peas, massala etc and I always used store bought spring roll wrappers or samosas wrappers and it just did not seem like the original crispy ones I had had in restaurants that were so amazingly good. So I saw that you should make your own dough recipe just using regular flour and wow much much better than the store bought wrappers. it was a lot of work to make the dough, then stuff each individual one with all the ingredients, but with the tamarind chutney and cilantro chutney sauces, they are so good. I also make saag paneer and take it over to my relatives who have no idea what it is, and they love it.
I rarely comment on youtube videos but this needs an exception. Just finished making this vindaloo and it is absolutely gorgeous. Usually I have issue that with many recipes, you need to add more of everything to have really spicy and tasteful result, but with your recipe, followed exactly step by step and it is insanely good. Thank you Bumbi, will definitely try more of your recipes!
This is an excellent recipe! I've done it many times. First time I followed it to the letter, later I improvised and tweaked it by adding a bit of base gravy, more water or stock, or extra tomato puree, or even veggies like potatos, chickpeas, cauliflower. No matter how you bend it, this recipe always come out super tasty!
Love the way you presented the video. Being a chef of 25 years does help to get the best out of your cooking. So for anyone who tries this recipe, prep time is essential, make sure you have everything to hand and don't get too despondent if it doesn't look exactly the same. Kashmiri chillies are there for the rich colour they give to the curry more than the heat they provide, as they are very mild. The chilli powder, sugar and vinegar are probably the 3 key ingredients to not overuse. Remember, you can always add but never take away. I prefer to use dried methi, crumbled in my vindaloo's, as it brings out more flavour. Sourcing quality ingredients is a must, don't be tempted to buy "off the shelf supermarket brand" spices as you will not get that authentic aromatic gravy. Great upload and keep up the good work.
@@anissayani4984 hi, there are countless variations of chicken curry with each region having their own unique style of making it. This is one such variation, typical to Goa .
Prepped this yesterday so I could marinate the chicken thighs overnight. Just finished cooking this and it is delicious, I'll probably add more spice when I make it again but I really appreciate that you didn't make it super spicy. I'm looking forward to having the leftovers tomorrow, I have no doubt that like you said it will be better the next day! Thank you so much for yet another delicious curry recipe (we've now made the keema curry and the all purpose base masala). We're never ordering Indian takeaway again thanks to your excellent recipes.
This was my first time really trying to cook on my own, and honestly it changed my perspective on a lot of things! The meal came out wonderfully and it makes me so excited to try out other dishes. Thank you!
Another hit! The restaurants in my area often add potatoes in the gravy, so I did as well. I parboiled them as I find potatoes don't cook well in tomato/acidic sauces. Flavour was same as what I've had at restaurants. Better than some, even. Thank you!
Hi Bumbi, I made this Vindaloo dish yesterday and it was absolutely awesome. My husband found it just as good or better then in a restaurant. Thank you so much for your wonderful recipes!😊
I’m Mexican and we have a dish almost similar to this one but with more types of chilis and watching this made we really want to try this recipe because it looks so so good and simple :) thank you for sharing your recipe!
I love Mexican food and even follow recipes from chefs like Rick Bayless, Pati Jinich. I find a lot of similarities between Indian and Mexican cuisine with the inclusion of chillies and cumin powder. Please may I know the name of the dish that you feel is similar to this one? Please try this recipe and send me your feedback. Thanks.
@@CurriesWithBumbi I’m not very sure what it’s called in Spanish but it’s a chicken adobo dish with guajillo ,acho and chipotle chilis and many seasonings:)
Just made this and it is delicious. One of the most balanced Vindaloo recipes I’ve tried. I did kick up the vinegar a bit because I like a little pungency to the flavor of a vindaloo, but I added some sugar so it wasn’t too sour. It turned out perfect, and I will definitely be making it again.
I have made this Chicken Vindaloo today. OMG!!!!!!. It is absolutely outstanding. Better than any restaurant one we have had, (honestly). Is highly addictive. You are a genius Bumbi. I served it with basmati rice, kachumber, roast potatoes and naan. Just so amazingly delicious. Thank you so much yet again. Is actually the (12) amazing recipe I have made from your fantastic channel. I missed out the peas pulao in my counting, which is delicious. Have a lovely weekend and take care xxx
So happy to hear that. I like the combination of your side dishes as well. All credit goes to you Emily. I can only share my favorite recipes but all the credit goes to my viewers who put in all the effort into making them and bringing them on to their table . I am so very happy that you keep trying my recipes. Thanks a lot Emily.
OMG that looks good! I love your videos. Your voice is as calming as a meditation. For this reason, for vegetarians or vegans, it is also worth watching the video. ;-)
Thanks for your compliment. I am really blessed to have you all as my subscribers as some of you even being vegetarian/vegan watch my non veg videos as well just to support me. I do not have words enough to thank you for all your support. My next video will be a vegan/vegetarian one, that’s for sure 😀
U are beautiful kind and loving soul. Ur lilting voice is music 🎶 to my ears. Although l love ur recipes l can't attempt ur vindaloo because it is very spicy. I can handle it but my family members can't. It's not practical to make this awesome curry for myself. Love u 💓 Bumbi u are music to my 83 year old ears. .May ur cooking and ur voice bring joy through the years. Love u my unseen friend. Message comes to u from South Africa. I hope 🙏 u could read my message and respond to it. I know this is an old recipe but l just looked at it today.
Hi, I am so glad you like watching my videos. Please use as little chillies you may want for any of my recipes. It was a pleasure reading your beautiful comment. My regards to you and thanks for your kind words 🙏🏾
I made this Friday and I have to say it is better than any restaurant Vindaloo we have tried. My husbands exact words were "This is phenomenal".... If you don't try this recipe, you are missing out big time! Once again "Thank you Bumbi" 💖💖🙏
I had a dinner party and served this exactly as you described! Ali g with your sweet potato roti and cilantro lime chutney and scented rice. I had all my guests toast “To Bumbi!” Thank you for your instruction and encouragement. Even my husband wants to learn to make curries now.
Ive never made Indian food but thankfully someone in a card shop someone (in Nebraska) was eating indian food and it inspired me to try it. Now my old boss from a pizza shop started an Indian restaraunt in my hometown far from nebraksa and eating the vinadaloo tonight made me search for your wonderful video. It looks excellently delicious, cant wait to try it plus you have a really nice voice over for the video. Cheers!
I like your videos. They're nicely explained and not too long. I 'liked' one a few days ago and now youtube thinks i want to watch every single curry video on the planet! - So i've just spent half a day telling youtube not to recommend all those channels. Except yours! 🤗
I made the vindaloo today after scoping this recipe out the past two days and shopping at the nearby Indian grocery store. Oh my this turned out well. Was apprehensive at first because I taste tested the raw masala and it didn’t taste like what I expected. By time it simmered and all the ingredients thoroughly cooked, it was absolutely amazing and worth it. I have only one complaint. I wish I had more gravy!!!! 😢 Thank you so much and I’ll be trying out your other recipes!!! Lastly, how can we make more gravy without adding too much water? I certainly dont want to make it watery or too thin. I like a thicker gravy.
You need to add water if you would like more gravy. Just give a taste test at the end and adjust the seasonings. I am glad you tried this recipe. Thank you
Just recently started eating Indian food.... this is my go to dish at the moment and I love it so much! Trying to save some money and make it on my own, lol; I order it way too much!
Thank you so much! My husband adores vindaloo and we moved to a place without any authentic Indian food. ☹️ I've gotten decent at butter chicken but not vindaloo. I'm in the kitchen right now using this recipe! I want to surprise him when he gets home from work. Thanks again for sharing with us!! ❤❤❤
thank you, I love this video. Indian food is one of my fav!!! about 7 years ago, I went to India and fell in love with the food there! I will try to make it home myself!!
I regularly make this and it is comparably to going to get vindaloo at the Indian food place. It is my favorite Indian dish and I am happy I know how to make it. Thank you!
Made this yesterday. I think I need my local Indian restaurant's vindaloo next to it to compare. It was missing a little something (more salt and could also be cinnamon because I found the stick still intact at the end of cooking, it never got ground up by the blender) or maybe something else. That said, it was still super tasty and I'm proud to discover my favorite Indian dish isn't all that hard to make. Thanks for sharing. I tried chana masala for the first time when I last ordered Indian because of the reviews the item was getting... sooo good. Will have to learn how to make that too. Glad I found your channel.
Just finished eating. Thank you for sharing, and thanks for dinner. Great videos, you have made me a better cook by sharing. Ill be back for another recipe for next week.
Made this yesterday and it was delicious. Appreciated by family and friends. Thanks Bambi. I always thought Vindaloo was tough to make.Your recipe is easy to follow.
Thank you so much . I made this dish for my Indian friend and she loved it we ate everything and the night ended very well for me thank you once again so much .
Fantastic recipe, I had to make it tonight after drooling all over myself watching this video. Turned out pretty well I added some extra hot chilli powder at the end as I like mine I little hotter. Thank u
Thank you. Your recipe is so well presented. Concise, clear, focussed and informative. I search for ways to make these dishes without relying on packaged sauces and you show us how simple and cost-effective it can be to do it yourself. If I wanted to add another ingredient (like more vegetables, I was thinking green capsicum, what would you choose? Potato, sweet potato, capsicum, eggplant? )
I just want to say that the vinegar gets absorbed after a day or two. And normally we would make Vindalho a couple of days in advance. In Goa we would make it with pork. Also, there are some other variations .. East Indian style, Anglo Indian style. All equally delicious. Im happy to have diacovered your channel.
I would be so happy if I could return to younger times with just a hot bath 😀 I love your recipes and videos! Thank you so much. Vindaloo ist always my favoutite!!!
This is my favorite recipe of yours. I like a lot of tanginess so I add, equal parts apple cider vinegar & sherry vinegar. Since I'm trained as an American/French chef, I substitute white pepper for the black pepper. Thank you so much! 🙏🙌😎
I made this yesterday. Added a little more vinegar and chillies, also added one of your favourites... 'potatoes' 😁 Couldn't wait until the next day though. I did make enough for a treat this weekend though. Delicious!
Ooooo this is better than our restaurant that I craved from 100% thank you!!! This is a dish made with LOVE that’s for sure, and it’s so fun making it!!!
Spectacular curry. I do like a bit more heat with my vindaloo so I added some Cayenne. I would probably double the khasmiri pepper if I did this again. Thank you!
Hi Bumbi. Just made your vindaloo masala. Absolutely gorgeous. I know I should not taste it before cooking. My Chillies are not as big or strong as yours it seems, I had to double the quantity. Anyway, that elusive vindalloo taste/Aroma is solved. It's the chillies themselves. Now I have to weigh on taste quantities to get it perfect with what I can get as regards spices. 1st site in history that worked. I do not give medals lightly, thank you so much. 🥇🥇🥇🥇🥇
nice. i add garam masala hot curry pwdr, and clove too. litl sugar n dash oil n cooking wine in marinade, sometimes i deep fry it, then simmer yuuuummmm. im gonna try the asian cornstarch velveting with this to make real soft meat.
