Would the recipe work without the all purpose flour. I am going to try the recipe with chickpea flour and sorghum flour and just 2tsp of rice flour instead of the tapioca and xanthum gum. Will let you know how it turns out 👍 New subscriber, thank you!
I am so happy I stumbled upon this video! I was just looking for a chickpea pasta video, and lo and behold, you’re using the exact same pasta extruder I ordered! We do low carb. Great video! I was wondering.. Is it possible to make chickpeas pasta with only chickpeas flour and water? And what about drying the pasta out - not cooking immediately? I would really appreciate if you could enlighten me on this topic - or guide me how to find recipe on this. Thanks!
oh gosh...my comment was deleted somehow...well, you can use only chickpea flour but the texture will be too rough. That's why I added plain flour. I have a recipe for chickpea flour only. I will let you know later. If you don't eat the noodles immediately, you can freeze them. It will be good for 2 weeks. Sorry for my late response.
Xanthan gum is like a glue because the chickpea flour is Gluten-Free. We need to combine with all dry ingredients with the xanthan gum. Hope it helps to you.:)
Don't you have to soak legumes over night, change water and then even boil for some longer time to make them digestable? How will this be digested by the body? Love

반가워요. 병아리콩 100%일때는 비율이 다 달라집니다. 또한 식감도 너무 거칠어서 별로 맛이 없어요. 나도 오랫동안 미국에서 공부하고 미숙에서 대학교수가 본업이었어서 뉴욕에 제자들이 꽤 있네요. 어린 대학생들보면 항상 잘 먹고 다니라고 해줍니다. 건강하게 잘 챙겨먹고 공부하세요.
I really enjoyed your videos and I am going t try these noodles. Do you think t would also work if using chickpea flour and vital wheat gluten flour(wheat gluten). Could you please experiment replacing tapioca with wheat gluten flour. I am your new subscriber and thank you so much for your videos
I think you can use wheat gluten flour instead of All-purpose flour but I prefer to use tapioca instead wheat gluten flour. I tried several chickpea noodles but this one is the best recipe.
