Fish peppers have some decent heat, slightly hotter than jalapeños, so I knew they would be perfect to infuse in oil. You can use any hot peppers you like. Dry the peppers first (I put mine in dehydrator for 125°F for 18 hrs - you can also hang them, or put in oven at 150°F for a couple of hours - it’ll vary so keep checking on them & make sure they’re dry before using). You’ll know they’re dry when brittle. Once completely dry, I sliced the peppers to expose the seeds, put them in a clean, sanitized jar, and added olive oil. You want to make sure that all peppers are covered in oil. Let them sit for a couple of days before using. You can drizzle them on pizza, pasta, salad, meat, veggies, etc. These make awesome gifts too! 🌶️🎁
