Not sure whether anyone from Gordon Ramsay's team will be reading much into the comments, but I wanted to say thank you for these videos. They're so well edited, perfectly easy to understand as a novice, and always inspiring. I really enjoy cooking and watching others cook. Thank you for posting it to RU-vid so that I can watch it on my phone while I'm cooking, and keeping the videos (and recipes) short and sweet.

I agree as long as it's food you want to cook.However when life happens and time is short it's a chore to cook boxed mac and cheese and boiled hot dogs for the kids.Thats when cooking sucks.Ramsey level of cooking I reserve for a day off work when I have time to enjoy prepping and cooking.

my moms away and there is no one besides her who can cook meal and only my brother and i are home so i started cook for us, at first i was very reluctant and a bad cook but after a week i started enjoying cooking and now i am looking forward for the time of day where i can cook again i am enjoying it

the brown sugar mellows out the spice and gives it a nice shine. you'd be surprised at how many SE Asian dishes use brown sugar in them.

+SgtSplatter782 Malaysian here. I cook Malay, Chinese and Indian at home. Never have i ever come across any recipe that requires Brown Sugar, or sugar for that matter. Maybe our brothers across the causeway bridge - Singapore add it into their dishes, because they like their food sweet! Whereas we like our food savoury across all types of cuisine! Or perhaps it's just that most recipes call for Cinnamon powder, which has a sweet taste profile. Otherwise i simply don't see a reason to add brown sugar unless you are caramelising stuff

This is one of my bf and I's favorite things to make! Sometimes we even make it into chili beef "rice bowls" with spinach or bok choi instead of lettuce... top with sliced carrot and cucumber... so good.

@@hans3331000 Hi Hans, I'm very glad you asked that. I do take certain liberties with recipes to make them appropriate for my husband. Since I've been cooking this way for so long, neither of us can stand anything that is sweet (except for berries and apples that we grow) I simply omitted the brown sugar in the meat and perhaps it wasn't as sweet, nor as golden as Chef Ramsay's, but was delicious. Sometimes when I want a *hint* of sweetness in a savory dish, I will grate some carrot. As to the sauce, I didn't put any brown sugar in the sauce. However, to balance the flavors, I did add a drop or two of stevia. These wraps are a favorite around here. Don't be afraid to modify a good, solid recipe like this to factor in for special dietary needs.

Wow this is so inventive, I'd like to have a try! How do you cook the gyoza wraps? Considering it is raw flour/dough. Do you fry the wraps separately, or do you lay the almost cooked beef onto the wraps whilst they are frying? :)

Queenie Hon With gyoza I generally stuff the prepared mixture into the raw pastry, then steam them, then fry them in a pan with a little oil to get the flat part crispy.

The more you cook the more confident you become. Season meat before you cook. Touch of olive oil. Get good color in your meat by breaking it up, and firing it up and make it crispy. Draining is crucial keeps meat crispy. Use just the chopped chili garlic and ginger first with the seasame seed oil lifts the flavor, and brn sugar carmalizes. Shreeded lime makes the meat frangrant. Crunch, salt, and sweet. Dipping sauce soy sauce adds dark rich color. Don't over do seasame seed oil, chop corriander once. The lettece is baby Gem.

We just made this! It turned out awesome! Make sure you go super high to sear the meat right. Especially on electric stoves. A dab of sour cream is REALLY good and helps off set the heat if you don’t like it super spicy

I tried this recipe and it was very authentic and flavourful. I didn't find baby lettuce but used the centre of the regular lettuce as mini lettuce scoops. Thank you

I love how Gordon says "a touch of this, a teaspoon of that" and then, proceeds to put in copious amounts of the ingredient in question, totally contrary to the initial instruction. Then again, artistry has it's own quirks. When you're a professional grade cook, a touch can go a long way. That aside, Gordon's cooking is literally phenomenal. I really do suppose he's amongst the best cooks in the world, simply because cooking is his passion. Wonderful model/example for people who want to get more connected to their cooking.....

Just take the seeds and membrane out of the chilis. You will still get the flavor with out the heat.

Actually, those red chili's are not really that hot. And when you fry them off in the pan they loose a lot of thier heat too. Trust me, try to eat one of those chili's raw, then eat one that's been in a stir fry, the difference in heat is crazy.

Tried this recipe and gotta say it was amazing. Used a cast iron for the minced beef and it turned out beautifully fragrant with the lime and ginger. Definitely a recipe I will try again.

Fish sauce tends to be very salty as well, so you don't need to add extra salt on top of that.

Reminds me of many years ago my uncle made lettuce wraps for us. I remember that we wrapped glutinous rice with preserved sausages. That was really nice.

The key to this dish as is with most other dishes is that he gives you a starting point to which you can adjust. Don't like so much fish sauce? Back off. Want it more sweet? Add more brown sugar. Want it hotter? Use hotter chilis. Want less salt? Use low sodium soy sauce. Want to make it gluten free? Use Tamari. I have made this dish 3 times now and have started adjusting to my wife's and my taste. One of my favorite things to cook.

I made this today and it was delicious! I skipped the lemon juice though because I don't like sourness. I put the minced beef/pork over rice in a lettuce wrap and it was so flavourful and tasty. Thanks Chef Ramsay!

Cooking lime juice will make it bitter... You should add it at the end when you've taken it off the heat..
