Chinese Fried Rice 

Fried Rice the way my Mum used to make it. Authentic? Meh, probably not even close. It's delicious, though. Mum never measured anything, so I don't tend to either. I did start with 3 cups of dry converted rice that I cooked the day before. You can use leftover plain white rice if you have it.
I also sliced 8oz of cremini mushrooms. Just use what you have. Everything else is to taste. Start with a little and add to it. Stop when your ancestors say 'enough child'.
