▷Ingredients:
■Cocoa sponge
2 whole eggs
60 g sugar
50 g cake flour
8g cocoa powder
■Chocolate cream
80 g sweet chocolate
50 g milk
200 ml heavy cream
10 g sugar
50 g sweet chocolate
▷How to make:
1. whisk the whole eggs with the sugar and warm them in a water bath until they reach a temperature of 30°C. Beat until white and fluffy.
2. Sift in the flour and cocoa powder and mix until powdery. Pour the batter into a mold lined with a cookie sheet and bake in a preheated oven at 170℃ for 25 to 30 minutes.
3. Remove the sponge cake from the heat and slice into four 10mm slices.
4. Melt 80 g of sweet chocolate in a pot of hot water. Add milk in two parts and mix until smooth and emulsified.
5. Add the sugar to the cream and whisk until thickened while chilling in ice water. Add all of the chocolate sauce and beat until the mixture is stiff enough to hold its shape when squeezed.
6. Put the chocolate cream into a bag and squeeze 1/3 of the cream onto the sponge slice. Lay the sponge and chocolate cream on top of each other. Refrigerate for at least 1 hour.
7. Melt 50 g of sweet chocolate in a pan of simmering water until smooth and spread thinly over the cooled cake.
8. Heat a knife and trim the four sides of the cake.
