➼ Recipe for 8 homemade chocolate croissants or pains au chocolat:
Ingredients:
• T45 flour (all-purpose flour): 420 gr
• Salt: 8 gr
• Sugar: 60 gr
• Fresh yeast: 20 gr or dry yeast: 10 gr
• Egg: 20 gr
• Butter: 20 gr
• Milk: 110 gr
• Water: 80 gr
• Tourage butter= ¼ of the weight of the dough (200 gr in the video)
• Bulk fermentation: 12 hours at 4°C or 40 minutes at -18°C
• Double turn / simple turn
• Roll out into a 33 cm x 30 cm rectangle before shaping
• Final fermentation: 2 h 30 at 27°C
• Baking: 16 min at 180°C
• Cooling on a cooling rack
Homemade chocolate sticks recipe:
• Chocolate sticks: 100 gr
• Almond and hazelnut praline paste: 130 gr
• Gavottes (crispy crêpes): 20 gr
• Puffed rice: 20 gr
