I made madeleines using Daiso silicone molds.
The silicone molds do not conduct heat well, so it takes a little longer to put them in the oven, but even after baking for a long time, the dough is moist and delicious.
They can also be frozen, so I added chocolate to make them glossy madeleines.
▷Ingredients(8 madeleine):
■Chocolate madeleine
1 egg
40g sugar
30g unsalted butter
10g sweet chocolate
25g rice flour
15g ground almonds
5g cocoa powder
2g baking powder
40g sweet chocolate
▷How to make:
1. chop 50 g sweet chocolate and divide into 40 g and 10 g portions; add unsalted butter to the 10 g of chocolate and melt it in a hot water bath.
2. Add the sugar to the whole egg and mix thoroughly. Add the chocolate mixture (1) and mix well.
3. Shake rice flour, ground almonds, cocoa powder and baking powder and mix. Put the dough into a squeeze bag.
4. Put about 20g of the dough into a silicon mold and bake in a preheated oven at 170℃ for 15 to 20 minutes.
If using metal molds, grease them with oil.
5. Melt 40g of sweet chocolate in a pan of simmering water. Spread the melted chocolate over the silicon mold and place the madeleines on top. Cool in the freezer for 10 minutes until the chocolate hardens.
