Choux au crauquelin - Cream Puffs Recipe

Choux Au Craquelin:
- 70 gr Water ( 5 tbsp)
- 50 gr Butter ( 3 1/2 tbsp)
- 60 gr Flour ( 8 tbsp )
- 2 Medium Eggs
- Pinch of Salt
Cookie Pastry:
- 50 gr Butter ( 3 1/2 tbsp)
- 50 gr Flour ( 6 1/2 tbsp)
- 50 gr Sugar ( 4 tbsp)
- Pinch of Salt
Filling:
- 400 gr Heavy Cream ( 14 ounces)
- 100 gr Philadelphia Cream Cheese (4 ounces)
- 1 tsp Vanilla
- Sugar ( Add to your liking)
NOTE: I made 9 large cream puffs. If you choose to make these smaller, baking time will vary. So check them after 15 min.

I made this and it’s the first time I’ve ever successfully made profiteroles correctly!! Ive always struggled with the baking part since the insides would be doughy but your instructions were perfect! Thank you so much ❤️

OMG EMMA! I just made these and they are so delicious!! The outside is perfectly crunchy and the cream is so yummy! Im so glad you made this recipe, its definitely my fav, and so easy! Making this again in the future! ☺️❤

I filled these with slightly softened strawberry ice cream, and then froze them for a few hours. They turned out GREAT!!!

Tried it for the third time - still works like a charm!! Thanks so much for sharing - as a tip for everyone - the temperature is really really important - 200 degree C (otherwise they dont rise as well)

Hi, Emma! Thanks for the recipe, I did it for the first time about a week ago and they came out perfect. I've just tried it again and they deflated, and I followed your recipe step by step, including leaving a spoon on the oven's door for 15min. Do you know what can cause deflation? A lil sad, but still delicious.

Hello Emma! I tried these today and they were seriously sooo good! Thank you so much for sharing the recipe! And yes, I'll never go back to normal cream puffs haha. My family also really enjoyed them. One thing though, when I kept the cream puffs the next day, the crust wasn't crispy anymore. Is that normal and is there any way I can fix that?
