LaloSupreme I’ve worked in a lot of professional kitchens, and it really is like that. For some reason, people drawn to that profession tend to be funny, snarky and goofy. There’s usually a sense of family in a kitchen. In fact, at my last job, we would have “family meal” before service. Chef would cook everyone (even front of the house) a family style meal and we all ate together before service. It gave us the energy to get through the service, but it also reinforced that we were a team. I miss working in a kitchen! I had to quit due to my neuropathy, but I loved it so much! It really was like “the office” but in a kitchen instead.

How to make your own Sambal Oelek (my mom recipe) Ingredients: 2 cloves garlic 4 cloves small shallot 8-10 chilies 1 teaspoon shrimp paste (or 2 tbs dried shrimp) 4 tbs vegetable oil 1 teaspoon of salt 1-2 tbs sugar Steps: 1. Using a mortar and pestle, blender, or food processor, grind all of these ingredients (except oil), to form a paste. If the mixture is too dry and grinding is difficult, add some of wourder. 2. Heat the oil in a wok or small frying pan. When the oil is moderately hot, sauté the paste over low heat until fragrant and maroon like. This should take about 15 minutes. Keep the heat low throughout the process and stir the paste constantly so that it does not stick to the pan.

OK question: what kind of chilies do you recommend, and do you use them whole or do you remove seeds ? Or are they not fresh chilies but canned chilies? Thanks from a neophyte who doesn't like spicy food but intent on slowly raising my tolerance level...

@@ellesinky8667 birds eye chilis are traditional, and put in whole. there's a variant of long chilis that are used and aren't so spicy, and you can always take out the seeds and pith. that's where most of the capsacin is. if something works for you, go with it! you never have to follow a recipe step by step. :)

I have to say, this with added carrots, oyster sauce, peanuts and then scallions at the end has become my go-to "ground beef sauce". Great with pasta, not just with noodles. Also great on top of a bowl of rice. As is, it really screams for something crunchy. The peanuts (or cashews) elevates it so much.

You should just try different kinds and see what you like, they're all so different. Some are sweeter, some are spicier, some are funkier, some are like a paste, some are lumpy. There are so many different combos of what goes in it, some have shrimp, some have anchovies...

Aaditya Goswami there are a lot versions of mie goreng here, chris's noods may look like one of the versions minus the tomato paste and butter cause we rarely use those ingridients

@@aadityagoswami similar but the sweetness of the noodles don't come from tomato paste and sugar, we use a sweet soy sauce which is very similar to the black sauce you usually see in those indomie packets, and we don't use butter in much of our dishes, we would probably use a cheaper fat like margarine if its a must but usually the oil alone is already enough to bring the noodles together. PS:you probably weren''t looking for this much details in a comment, but I'm craving street mie goreng too right now so might as well get into the details :)

Nah. Brad is a c r u s h e d garlic guy. it releases allicin, which is a two part epoxy which is the best part of the garlic. I believe.

One thing I would suggest is the replacement of unsweetened rice vinegar with tamarind juice or water. That is the ingredient we will use in Malaysia and Indonesia to give a little bit of fruity sourness of sambal. Just my suggestion!

Hell, I'm single and one of the things I did when getting my own place was getting a set of pots and pans including a big one. I think mine is a bit narrower than his but taller. Works great for making spaghetti and other dishes that call for a lot of boiling water.

i just made this with some freezer burnt chicken thighs that i minced up instead of ground pork ... ..and used sriracha instead of sambal oelek... we have some beautiful basil outside that i jammed in there. This is very. very. very good.
