Join Chris Morocco in the Bon Appétit Test Kitchen as he makes spicy chicken katsu sandwiches. These sandwiches combine the shattering panko crispiness of katsu-style cutlets and the fiery heat found in Nashville-style hot chicken with some cooling shredded lettuce to put out the fire.

My daughter comes to visit once a week for a sleepover. I've been making these for her and she's been asking for a repeat every week and now, along with the wine and the knitting, this sandwich has become our weekly thing! Love this sandwich! One thing...I only fry the chicken for a few minutes then put them in a 400F oven on a screen/cookie sheet. Most of the grease drips off and it gets super crunchy. But otherwise, we're all in for these!

@BauKim

I think I'm going to add some korean red pepper powder (gochugaru), and some Japanese seven spice (shichimi) for a bit more of some of that sweet and salty flavor and then take up the cayenne even more for that extra heat. Thank you Chris. This looks so freaking amazing! Also I don't know if I can get some milk bread so I might go brioche for the bread. I am so excited about this!
@chantelcarter7656

I made a version of this with what I had in my kitchen at the time, which was wheat bread, normal breadcrumbs, red leaf lettuce and sriracha. I don’t love bread and butter pickles, so I diced regular pickle spears in my sauce and used gochujang instead of regular hot sauce for that sweetness he’s talking about... All I can say is, I’m glad I made two. 😌 it’s a really flexible recipe that you can play around with, can’t wait to make the original! (By the way, don’t be afraid about the cayenne pepper. I used less than he recommended because I was scared, and ended up adding more spice after the fact 🤷🏾‍♀️ you’ll be fine!!)
