I never understood why my puffs always collapsed.

I think he explains it briefly but it you let your puffs cool too quickly they will collapse. Some bakers will even turn the oven off and leave the puffs in there after they’re done baking to cool down slowly.

It's an airy dough, so when the temperature drops too quickly, the air pressure inside decreases (cold air is denser than hot air), causing it to collapse. You gotta cool it gradually, so the gluten structure has time to set.
