When I make these pickles I add a few drops of red food coloring to make it a deeper red color. If you like tuna salad with sweet pickles, try some of these. It make an interesting taste.

I have made these for years, some tips are get you a crock and make sure the cucumbers are below the water line for the 24hrs, when time to rinse make sure to rinse them ( it says 3 times ) but make Sure they rinse unto water is clean. Soak them in your cold ice water but make sure it is also submerged for the 3 hours. You will need a BIG pot to make brine and make sure to get the cinnamon candies melted down . You don’t can the cinnamon sticks remove them. I have made these a few times. It is very important to rinse them - a lot. Your water should run clear. If any lime is left on them, it will mess with the alkaline level and could cause them to go bad. Just so you know.
