I have a friend who sells cheshunt this is how easy it is with this method. First cut in half. Grab the shell with a pair of pliers ( it has to be real pliers) and pull off/pop out the nut. It is very easy to remove the outer shell when it is cut in half and cold. Put the half into boiling water for 10 to 20 seconds only, remove, and rub off the inner husk with a tea towel. The inner husk is very easy att this point. Put in jars and freeze for Christmas! Steaming them is quick,follow keef untill the cooking stage instead of boiling steam for 5mins the skin lifts and splits. Or microwave them , place in bowl clingfilm them cook for 6 mins leave to cool then peel
If you dont have a pressure cooker to make a dark stock, with the stock ingredients keef showed , firstly put into the oven and roast high for an 1hr untill darkened then place into a pot and boil this for min 1hr max 5hrs, will give you the dark stock, like a pressure cooker would, just remember to keep eye on the liquid
render the fat place into a cold pan add 3tbspn cold water and bring upto heat, then reduce heat, the water allows the fat to render out without burning. The water will evaporate leaving only the liquid fat When resting a turkey most people don't rest it long enough, when resting a turkey rest it for 50% of the total cook time of the turke. I loved this show so much. It was so homey such wonderful atmosphere, so cosy, two of you so happy , how I miss it. My husband has been gone for 10 years and I live alone . I love duck, my favorite bird and the stuffing sounds so wonderful. I have never seen such lean bacon, so perfect for wrapping. The stock looked so perfect. @@Keefcooks 😆.. what is it about Christmas meats, such as duck and turkey, that is always dry? I don't know whether your duck was dry (it did look like it was a little)? Chinese restaurants tend to serve it moist, because its cooked at high heat very quickly, so you get a crispy skin, and juicy flesh.. I've given up buying turkey and ducks because I'm always disappointed with the way it turns out.. as I said few weeks ago gimme 2 nice Barnsley chops anyday!

Just so love how down to earth you two are - no faffing about with 'cheffy' crap, just proper cooking. Hey Keef you know at the pinnacle of ale snobbery, there are those who say it's not real ale unless it's pressure carbonated in the bottle or cask (like a champagne)? Also, apparently in Norway if they're drinking beer it's ale, like you. But in Sweden they drink stouts as well. (Not including American style lager, every country has some people who prefer that, for some reason.)

I haven't tried cooking chestnuts before. Nevertheless I won't let that deter me from strongly suggesting you get yourself a chestnut knife, so you can peel them in a single whack. I expect your regular onion knife stockist would carry them at this time of year.
