I know, it's maddening. I found this on another recipe: "Heat oven to 450 degrees. Place shells in a baking pan and roast for 5-8 minutes, until they begin to turn golden."

@@JColeComedian I mean it's kinda just common sense. The point is to roast the shells so turn it quite high. It's not important to have an exact temp, you will see when it's done.

You are looking for a deep change in aroma. Which is what is happening when you roast the shells in the oven I would say set the oven to 200 degrees Celsius and roast for 6-10 minutes checking to insure the shells do not burn. Hope this helped

Crustecean stock. Of course a fish stock or a clam/oyster stock is different though all have the sea flavor.

What could I substitute for the tomatoe paste in my stock? Could I use a pesto instead of tomatoe paste?

Tomatoes will add some sugars for caramelization, acidity, and earthiness. Some brown sugar, vinegar or lemon juice, and mushrooms might hit all those.

Tomato paste adds depth to the sauce creating and adding rich acidity. This further intensified the flavor of the shrimp. It’s like when people say add a touch of coffee to a hot chocolate and it will enrich the flavor of the chocolate. Hope this helped you
