This is one of those dishes that I often forget about, but whenever I remember to make it again, we just can’t stop eating it. It’s often followed with a “I need to make this once a week” reminder until I forget again. Seriously, this is too delicious, and quite easy to make too. 😋😋 See recipe below. ⬇️
Cilantro Lime Chicken 🌿
Ingredients:
-2 TBSP extra-virgin olive oil
-Cooking oil of choice
-Juice of 2 limes
-1/4 cup freshly chopped cilantro
-2 cloves garlic, minced
-1/2 tsp ground cumin
-Pinch crushed red pepper flakes
-4 bone-in, skin-on chicken thighs
-Kosher salt
-Freshly ground black pepper
Instructions:
-Whisk together EVO oil, lime juice, cilantro, garlic, cumin, and red pepper flakes. Add chicken and toss to coat. Let marinate in fridge 30 minutes and up to 2 hours.
-When ready to cook, preheat oven to 425°F. In a large ovenproof skillet over medium-high heat, heat 2 TBSP cooking oil. Season chicken with salt and pepper, then add to skillet skin-side down and pour in remaining marinade. Sear until skin is golden and crispy, about 6 minutes. Flip and cook 2 minutes more. (If the skin of your chicken doesn’t turn golden & crispy bec of the marinade, you can broil them at the very end)
-Transfer skillet to oven and bake until chicken is cooked through, 10 to 12 minutes. If your skillet isn’t oven safe, just transfer to a baking dish.
*Broil on low (skin facing up) for a few mins to get the skin to turn crispy - just be on the look out to make sure they don’t burn.
-Serve over rice drizzled with pan drippings.
