Meatballs, meatballs, meatballs… I LOVE MEATBALLS!
Ok… I think you get the point. Meatballs are hands down one of my favorite things to eat and remix because it’s incredibly versatile. You can make them spicy, tangy, herbaceous, or even sweet. Today, I made Cilantro Lime Meatballs, which is a Hispanic take on an Italian favorite.
In order to make these Cilantro Lime Meatballs, you'll need:
• ½ cup recao/ cilantro/ culantro
• 1lb of ground beef-I like an 85/15 or 80/20 blend
• ½ tsp oregano
• 1tbsp soy sauce
• ½ tbsp. onion powder
• Sprinkle of adobo or to taste-- a tu gusto
• 1tbsp garlic powder
• 1 ½ tbsp. sofrito
• Ground black pepper to taste
• 1 lime
• ½ cup of breadcrumbs
• eggs-optional
• ½ white onion
• 2tbsp green pepper (I eyeballed this)
• ¼ tsp bouillon cube
• 3 tbsp. tomato paste
• 1 cup of water
Directions:
For your meatballs, combine your recao, soy sauce, adobo, garlic powder, onion powder, oregano, and lime juice together. Mix it well and massage the meat with your hands. Then create equal sized meatballs and let them cool in the fridge for an hour or so. Once chilled, brown them on all sides until golden brown and then remove.
Now for your sauce-- Add your chopped onions, peppers, garlic, and bouillon cube. Once softened, add tomato paste and water. When it begins to simmer add your meatballs turning them occasionally. After they're all coated in your yummy sauce cover them for about an hour to two hours until they're cooked all the way through. Feel free to add extra cilantro if you truly want an herbaceous sauce.
Serve with rice and avocado, bread, or pasta of course! Enjoy! Buen Provecho.

I’ve been with my partner(who is Dominican) for 10 years and his mother used to always make *ME* meatballs with white rice and beans. I’m so happy I found this recipe and can’t wait to try it!

I made these meatballs and served with avocado and it was wonderful, Chef Zee. Thank you. My wife who is from Japan doesn’t like cilantro but she liked cilantro in the meatballs. This is going to be a regular dinner item for us from on. My wife likes sofrito when I used it as part of the marinade for Pernil and when I have used it in a rice dish. Once again thank you. I will be watching your site regularly from now on.

I just made this but put aleppo pepprt in the meatballs. I also put a tablespoon of sofrito on the sauce along with poblano pepper in place of bell pepper. Yum.

Hello I am currently making these bc I had most ingredients at home. And you are so right it smells delicious. I was afraid to do it without the breadcrumbs and refrigerating it. And I did it either way and it did not break apart on the stove. go ahead and make them ! Don’t be afraid. These are so delicious. The onions and cilantro just pop while eating these 😍😍😍😍😍😍

I made these again this time with ground turkey. They were also phenomenal. Only thing this was my first time working with ground turkey. It was a lot slimier if you will. I had to use A LOT more bread crumbs and also used three beaten eggs (it was 1.8 lbs of turkey) to get the meat to bind together. They came out great. Thanks chef Zee for your recipes. Next is pernil for Christmas!

You're welcome! Making these with ground turkey is super tasty but yes... you definitely have to work a little bit to get the meat to bind together. Sometimes, I'll make a semi wet sofrito and that also does the trick :)

Hey Chef Zee! This recipe looks incredible. I was wondering if the meatballs are fully cooked through before they are added to the sauce? If not, how long should they be cooked until they’re completely done? I’d love to add these to my weekly meal prep but would like the skip on the sauce. Thanks in advance!

For a good cutting board that is affordable EPICURIAN . And for knives Damascus stainless steel(amazon) pretty sharp.

Thank you so much! Yes, it's so hard... For instance, the only contact I have with adobo is when buying canned chipotle peppers in adobo sauce which I use to make my own habanero / chipotle salsa roja at home for my breakfast sandwiches, burritos etc, but finding plain adobo on its own? No way! Also, I make my own sour cream from scratch but to be honest, it always end up tasting like plain Greek yogurt...

This recipe is so good! I made it tonight. Only thing I messed up was that I put half a cup of recaito sauce. Was rushing and didn't really watch the video and just went off the notes. Well the meatballs had great flavor but were very fragile. Too much liquid I guess due to the recaito. Should of put egg in there.

I don't always add eggs to meatballs. I always equate eggs and ground beef with meatloaf lol nonetheless, you can add eggs if you want to make sure that the meatballs will hold while cooking

I made this recipe and it was a fail. I used ground turkey. I wish I would’ve added an egg and more bread crumbs. Because it turned out really slimy. The taste was delicious but the texture was super off and it completely fell apart and ended up with a big slop. 😞😞😞 I was really sad but I really wanna try again because it was sooo tasty.
