Claire is a very good host. The videos are fun and informative but the process is never intimidating when she explains it. Also, thank you for posting so many Thanksgiving prep ideas!
After watching a Brad video, I always think "That was hilarious/entertaining/educational" but after a Claire video I think "Wow, I COULD make this Bruleed Pumpkin Pie!"
This is one of my favorite videos from BA or from Claire. This pie seems delicious! I know this is a dangerous thought, but my mother is dairy-free. Otherwise, I think she would love this pie. I have never really baked with dairy substitutes and I’m worried about mouthfeel and stability. Do you or any commenters have dairy-free ideas to make this?
After weeks of ignoring recommended videos of her "chef makes gourmet version of candies" series I decided to finally watch her videos just to found out I really liked her content, sadly I just found out she is not longer in BA, so sad dude, so sad
@MYHOLLANDGIRL If I were to speculate it is to seal the baked crust so that the liquid filling doesn't sog it out. Notice that she paints on the egg layer and then bakes it to set it.
I think Claire should have her own channel. She's one of the best RU-vid hosts I've ever seen - very genuine. Not many people can truly be themselves on RU-vid and not come across as phony or loud or obnoxious. Probably 85% of RU-vidrs annoy me.
I love Claire very much. But every once in a while, I just prayed to see Brad pops in and says Hi to Claire. (I haven't got out of the day-dreaming stage of a teenager yet, I guess. lol)
Made this for Thanksgiving. Decided to brûlée the individual slices as they're served since it's just me and my wife and we didn't want a soggy brûlée topping on day 2. Worked like a charm! The pie is very good and I will definitely make it again. The only problem was that the crust was very difficult to roll out but very forgiving to "patching." Highly recommend!
Its impossible to remake libbys pumpkin puree because theres NO PUMPKIN in it :) just squash... so challenge for BA: remake their pumpkin puree but with squash ;)

Your homemade pie filling doesn't have the same flavor as the canned because you're using the wrong pumpkins, you need what's called a Sugar Pumpkin. You'll see and taste the difference immediately!
For me the reason I love watching Claire is that she is so genuine. She constantly says that what she made is "really good" and in the gourmet chef series she is constantly burned out and I love how she reacts by having an existential crisis and still always delivers.
