Bun Dough Recipe:
1/3 cup granulated sugar
1/3 cup shortening
1 teaspoon salt
2 large eggs, beaten
1/8 teaspoon lemon emulsion, or lemon juice
1/2 cup pastry flour
2 3/4 cup all-purpose flour
4 packets (1 oz) rapid dry yeast
3/4 cup water (depends on the feel of the dough, you might need more or less)
Yield- 2 lbs
Combine sugar and room-temperature shortening in a standing mixer bowl, fit with a dough hook. Mix on low speed. Add in salt when sugar and shortening start to come together.
Add flavoring to bowl. Combine yeast and flour together.
Add flour mixture to the bowl, mix on low speed.
Add water slowly before flour is fully incorporated, then continue mixing on low speed until the flour has become hydrated and incorporated with the dough and isn’t sticking to the sides of the bowl.
Once all ingredients are combined, turn the mixer up to the next speed. Your dough is done once almost all of the dough is wrapped around the hook (your dough will be tacky once it’s done).
Flour your working surface, scrape out dough onto surface. Separate depending on the size of your sheet tray. If you’re using a quarter sheet pan, each tray will get 1 pound of dough. With a half sheet tray, the dough ball will be 2 pounds.
Fold dough into itself, roll into a smooth ball. Place onto a lightly floured sheet tray. Cover with plastic wrap and let rest in your refrigerator up to an hour, minimum 30 minutes.
Make your crumb.
Crumb Recipe:
5 ounces vanilla cake (store-bought or home-made)
1 1/4 cups brown sugar
1 pound (4 sticks) of room temperature butter or shortening
2 1/4 cup pastry flour
1 1/4 cinnamon
1 1/4 teaspoon baking powder
1 1/4 teaspoon salt
Add cake to mixer, paddle on low speed until cake looks like a loose crumb,
Add in brown sugar, pulse 2-3 times, then keep on medium-low speed, then add in your butter. Once incorporated, kick up the speed to medium and cream until butter has lightened in color.
Turn mixer off. Combine dry ingredients, stir with a whisk, add to bowl.
Pulse mixer on stir several times before mixing on low speed. Continue to mix on low speed until dough comes together.
Leave on countertop uncovered while preparing your trays to bake the bun dough.
Assembly-
Prep sheet tray by covering it in a thin layer of butter or shortening
Flour surface and lightly flour the top of your dough. Roll out rested dough until its a little longer than the length of the tray (the dough with snap back more as you work the dough longer).
Lift dough slightly from surface, this will shrink the dough.
Fold dough in half, place in tray, fold in edges to the shape of the pan.
Dock your dough using a fork or a rolling docker. Rest 30 minutes.
Lightly and evenly wet the surface with a pastry brush and water
Press large crumbs into surface of dough, fill in gaps with smaller crumbs
Bake at 325 for about 25 minutes in a convection oven, or 350 for about 25 minutes in a conventional oven or until the crumbs turn a light golden brown.
Rest on tray until cooled. Sift powdered sugar on top, portion and serve.

Joe's tutorials are the best. He's so thoughtful in explaining the choices he's making, the textures you should be feeling while baking, and explaining how alternative ingredients will affect the recipe.

You can tell he has trained bakers before. He is so detailed, and tells you what things will look like at each stage. Perfect teaching! If your crumb cake doesn't turn out, it isn't because he didn't explain it.

So, who ran the bakery in the 40’s and 50’s? I am originally from Jersey City and my father used to take a trip on Saturday morning to Hoboken just to pick up this coffee cake! Do I remember the name of the bakery? No! We moved to the Midwest in the mid fifties but every time they made a trip back to visit he would run and pick up a dozen and bring them back to freeze! We rationed them out like they were gold! I’m 73 and this video brought tears to my eyes! oh the memories!

Hey Joey. Don't know if you still read these comments, but do you have any advice for an older lady, who has worked in retail bakery all her life, but would like to explore starting a bakery of her own. Perhaps start a cottage bakery business, see how it goes, and move on from there. I have no formal education in pastry arts. Just experience gained over 30 yrs. in retail supermarket bakeries. Crumb cakes are my absolute favorite, but I prefer crumbs using regular sugar. Not brown sugar. Cheers!

When they still had just the original bakery, I was fortunate enough to get in early before it got too crazy and bought a little of a lot, this being one of the things that was always talked about in the show. I'm from Baltimore and we have a lot of good local bakeries, and I have to say every thing that I tried was incredible but this is the one item I was disappointed in. I just thought it was dry and not much taste. Everything else was really delicious just didn't get the big thing about the crumb cake. I feel like I've had better locally.

i made this recipe 2 different times and both times the streusel / crumb recipe did not hold its shape and seemed to "melt" spread out ??

I'm in the middle of making this recipe right now and ran into the same problem with the crumb top being a super soft batter consistency after immediately mixing. I'm guessing it's the use of all pastry flour, as prescribed in the written recipe? Joe states that he uses 1/2 AP flour and 1/2 pastry. All pastry might be too delicate. I'm going to try saving mine with some all purpose flour. Edit: I just pulled my crumb cake out and had the identical problem: the crumb melted. I have a few possible alterations for next time: make sure the 5 oz vanilla cake is on the dry/stale side, use a combination of all purpose and pastry flours, reduce the butter content, and/or use vegetable shortening instead. I have half of the dough and half crumb left after making a quarter sheet pan. I'll try and get the crumb to dry before using these up.

I can see why you don't punch dough. you are using a lot of yeast. crumb formula will definitely become part of my crumb buns. I'm from North Jersey . my dad was a baker.

Tried this recipe the other day. It turned out great. Only issue is that in the recipe it seems like they are missing all purpose flour from the crumb recipe. He mentions the crumb has both AP and cake but they only show measurement for cake flour. Other than that it was really good.

At the 17:00 mark, right after rolling the dough, the baker places it in the pan, and docks it, it has edges that are sloppy and riding up the sides irregularly. He does a switch for a pan of rested dough which is neatly trimmed and fits perfectly into the pan. What gives? When, and how, do you trim the edges of the dough to fit into the pan...or do you want to cook this with raised edges on the sides?

Boy do I miss crumb cake I remember when I was a kid my father would go to Wyckoff Bakery and we always had crumb cake unfortunately I'm out here in San Francisco which has absolutely nothing! I can't find crumb cake anywhere! Boy do I miss NJ! You are a great instructor boss!

There is an error in the Crumb Recipe b/c it is missing the 2nd type of flour that Joe talks about in the video. At 10:20 Joe says about the crumb recipe “again two different types of flour...if I was going to use one predominant flour, I would use the pastry flour”. The problem is that the recipe only lists pastry flour.

I guess it's a mix of all purpose and pastry flour. If you're curious just experiment with different ratios and stick with what result you like the best. The difference will be minimal though

I grew up in the Bronx many years ago. My family shopped at 187th Street in the Little Italy of the Bronx. Many Italian bakeries and Italian restaurants there too. Delicious foods, breads, pastries, cookies and cakes. Love seeing your items on Cake Boss. Reminds me of my childhood days. Delicious cannoli’s etc.

Exactly like the ones I grew up with in NJ. It was always sold by the piece in a wax paper bag. Thank you! Now where am I going to find a piece of leftover yellow cake for the crumbs?

lived in every NEIGHBORHOOD in hoboken , bought the crumb cake from AT THE TIME shoneys during the 50'S .

There is NOTHING better than a good crumb cake. It’s by far my favorite. Only problem is a lot of bakeries by me don’t make it well it’s either too dried out with no big crumbs or they have opposite problem and it’s like concrete.

Very nice presentation. As a baker I can say your execution was perfect. Often I have to bake many if the items you sell because although I am from NY City, there are no bakeries that produce the northern type baked goods.

I love coffee and crumb cakes but I would like to start storing them in a airtight container in the fridge so I can enjoy them longer than 4 days. Will doing that change the taste or texture? Should I wrap each individual cake bar/slice with plastic wrap before placing it in a container, then into the refrigerator? Or would you advise against storing the cake in the fridge?

Just curious is it still considered a crumb cake if it’s made from a dough?

I would say yes only because ive ate their crumb cake before. Only because its 2 different layers the bottom kinda cake like but thicker tougher but delicous. Top layers Crumbs lots of crumbs and powdered sugar you need a bib. But its so worth it. Its one of the 2 items worth driving or traveling to Carlos Bake shop for. This and the lobster tails.

To me this a crumb bun because it is made with a yeast dough. Crumb cake is made with a cake batter with a crumb topping.

Before baking soda and baking powder became widely available in the 1800s, cakes relied on yeast and eggs for leavening.

Crumb bun is made with yeast raised dough like you did here. Crumb cake is made with a cake like batter that is leavened with baking powder instead of yeast. Crumb size in both are irrelevant. Nice video and great recipe!
