We've had a lot of request for a classic southern fried chicken recipe. We're showing you how to get a homemade- from scratch- fried chicken recipe start to finish!

Classic Fried Chicken Recipe
3.5 - 4 lb. whole chicken
2 1/4 cups butternilk
1 tablespoon baking powder
2 1/4 cups all-purpose flour
⅓ cup cornstarch
2 ½ tablespoons Red River Ranch Original Seasoning (kentrollins.com) or seasoned salt/favorite all-purpose seasoning
2 tablespoons ground black pepper
1 tablespoon poultry seasoning
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon cayenne pepper (optional)
2 teaspoons smoked paprika
1 teaspoon celery salt
2 teaspoons white pepper
Fry oil
-Cut the chicken up (as shown in video).
-In a large pan pour in the buttermilk and whisk in the baking powder. Add the chicken pieces and turn to generously coat. Cover and chill for at least one hour.
-Remove the chicken from the icebox about 30 minutes before frying and flip each piece over.
-Meanwhile, in a bowl combine the remaining spices.
-Add about 1 1/2 cups of the flour mixture into a plastic bag. Using a pair of tongs, remove a piece of chicken from the buttermilk and allow any excess buttermilk to drip off. Place the chicken in the bag and toss to generously coat. Place on a wire rack. Repeat with the remaining chicken, adding more flour mixture to the bag, as needed.
-Let the chicken set about 10 minutes before frying.
-Pour about 1-inch deep of oil into a cast iron skillet or Dutch oven (enough for the oil to reach about halfway up the chicken). Heat to 340-350 degrees F. over medium-high heat.
-Add the chicken to the skillet and cover with a lid. Cook for about 5 to 8 minutes or until a light golden brown. Remove the lid and flip each piece. Continue cooking (with no lid) an additional 5 - 7 minutes, rotating as needed, until golden brown and the internal temperature is 165 degrees. F.
-Allow to cool slightly on a wire rack. Serve warm.

My grandmother wouldn't know what to do with one. Best fried chicken, eggs, crab cakes, oysters, fried crabs, fish, gizzards, pork and lamb chops, even chitlins. She'd even fry me a steak when I asked.

My grandma and my mama made sure to teach me how to cut up a chicken before age 10! Whole chickens are cheaper than already cut up chicken. The only pans I use are cast iron, it distributes the heat evenly and it just makes everything taste better! My friends complain that the cast iron skillets they use stick, If you season your cast iron right, it will become non-stick. Thank you for sharing your recipes with this old girl from Arkansas!

You can't beat a classic. Southern Fried Chicken is just the best and i was surprised to find recipes from 1823 that i saw on the Townsend 18th Century Cooking. They even had Onion Rings in batter in the 18th Century. Goes to show that great comfort food is here to stay. Great job Kent and Co. Now enjoy. Cheers Moose.

When I was growing up, my Mom always tried to make fried chicken as good as my Grandmother. Using the same recipe and copying everything she did, except for the cast iron pan my Grandmother used. It made all the difference. I have it today and only fry with it. Thanks for your video.

My grandpa would fight you for the fried back. If it did not make in into the frying pan there was hell to pay. My grandma used the back to cover the liver while it fried, since it popped and splashed out grease while it cooked. Thanks Kent.

Hey y’all. My daddy is from Corbin Kentucky. The birthplace of Kentucky fried chicken. He even knew the colonel. Momma is from one county over. She taught me how to make delicious fried chicken. And my amazing husband grew up in the panhandle of Oklahoma. They mostly raised hogs but they had chickens too. The Cowboy has it down pat. 🤗🤗. Shared to Facebook.

My grandma always fried chicken just like that, but I never saw her use a meat thermometer, she made some of the best fried chicken I've ever eaten, along with fried taters & onions fresh green beans from the garden and a big ole sliced red tomato, watching you cook reminds me of the good ole days eating grandmas cooking, Thanks For The Memories and Keep Them Videos Coming 👍🏻

Man that looks so good. Reminds me of a restaurant in Tulsa called the Golden Drumstick, closed long ago. That was their specialty, and they pushed the idea of putting honey on your fried chicken. They brought homemade honey to the table and gave you cloth napkins and a dish of warm water to clean your hands with. To this day I love fried chicken with honey on it, and a little Louisiana hot sauce on a bite now and then. The hot, sweet, and acidic vinegar flavors really makes fried chicken good.

I inherited my grandmother's 1930s vintage Lodge chicken frier! She made the world's best friend chicken! I've been meaning to get it out and strip the old rancid seasoning off and reseason it and put it to work! Now, I've got an excuse to do it.

Wow, thank you so much. You brought back fond memories of my Grandmother Hollis, from Oklahoma. She'd grab two large skellets, and I knew it was chicken finger lickin' dinner night. I don't know what all she seasoned it with, but it was the best I ever did eat. She always used lard and later in years it was Crisco. Man do I miss her. Wish I could come visit with you all. I learned how to fry chicken watching Mee Maw (thats what we called her) in the kitchen when I was a little boy. The closest smell to being in heaven, I think. Mee Maw was from Oklahoma and she fried it just like you sir! The only thing I think would make this chicken any better is to kill it that day, and fry it in bacon grease or lard. But I have not learned how to pluck a chicken yet! Thanks for sharing sir, you bring back some memories of my childhood. Thank you again sir.

The Shake and Bake commercial went like this. Family sitting at the dinner table eating Shake and Bake chicken. Father says to family, “hmm hmmm, this sure is good fried chicken.” To which the little girls says, in a southern accent, “it’s not fried, it’s Shake and Bake and I helped” (approx 1968 commercial) I remember that commercial like it was yesterday.

I've been following your channel for about a month now and it's my favorite. I have always had a problem with fried chicken. You know, burnt on the outside and raw in the middle. I cooked it in my 10 inch dutch oven about 8 minutes each side and that was the best that I have ever made. I'm going to make the shepards pie and chicken and dumplings next. Two thumbs up. 👍👍

This reminds me so much of Sunday Chicken dinner at Great Grandmother's house.50 plus years later I can still taste it,it was that good!Thanks Kent and Shannon for these great videos. It shows that honesty, hard work ,and just plain old common decency are still prevalent in 2020.

I'm from Louisiana and my grandma makes the best fried chicken i have ever eaten .... She swears by the old wives tale of if you shake ur chicken with the seasoning in a brown paper bag that it makes it taste better... Idk what it is but it's so good

I have my Mom's Wagner cast skillet with drip-top lid circa 1938. I remember watching her use it to fry chicken but did NOT know the specific's UNTIL this vid! Thank-you Ken you reconnected me with a happy memory.

This is one of the best fried chicken video's I have seen on youtube. I look forward to trying this recipe. I did notice that 99 people gave this a thumbs down they must be scalawags and carpetbaggers. I will be posting what I think of the recipe later in the week.

Looks good Kent... when shallow frying chicken a lid is very necessary. I must say when cooking chicken this way I do prefer it to soak in buttermilk rather then a brine... Thanks for the video : )

You know it’s chicken done right when it’s finger lickin good! Amazing how many folks like us grew up with fond memories of Sunday fried chicken and family time. What are we doing to pass those kinds of memories on to our youngins? I won’t forget the time my wife and I were living in Japan. We cooked a turkey for Thanksgiving and invited our Japanese friends over to share in our meal. One of the wives was so astonished with the bird and asked where we ever found a chicken so big? Everyone loved the meal and we enjoyed the company of friends while we were so far from home at the Holiday! 🤠
