I love her attitude. She is trying to do authentic Italian it can be to really introduce Italian cuisines in right way. We really need people like her. There are so many fakes out there cheating and deceiving innocent people. She is trying so hard for us not to fall off into those bad people's hands. Thank you so much! I'm always looking for good kale recipes, and this one is a winner! I made it last night, and it was so delicious that I was actually scraping the skillet clean with my finger to get the last of the sauce before I washed up. It didn't take too long to make, used minimal cookware, and was easy to clean up. I did have to be there watching as the pasta cooked so that I could stir and add water, but it didn't take so much of my attention that I couldn't chat with a friend or listen to music at the same time. I appreciated that the pasta cooked slower than usual because the al dente window was longer, so there was less sense of time pressure. Because it was late at night, I decided beforehand that I wouldn't be running the food processor. I wasn't sure how it would affect the result, but at least I knew I wasn't going to be scared away by my own vegetables. I cut everything pretty fine to avoid large chunks and kept a close eye on how fast it was cooking. I was very pleasantly surprised at how well it all turned out even though I wasn't able to do that part of the recipe. My pasta was already creamy and delicious even before I added the egg and cheese mixture, and then it was even better. I'm definitely making this again.

Not what I would consider a pasta style meal so thanks you for giving me another view of using pasta & vegetables. My family doesn't like Kale what would you recommend as an alternative to kale? I have to add this to my meal rotation.

Pasta in General is healthy only carbs a bit of protein and no fat yes its high cal but take care of the portion size dont over do it with the sauce and cheese Mix in some veggies and some yummy Protein and one has a full meal which is around 400 - 500 cal where the Pasta itself will take most of the cals when Done correctly
