Classic lemon tart recipe with tricks to a perfect smooth tart shell-key lime pie

Lemon tart, or more accurately, lime and orange tart: When you bite into this tart, the creamy lemon custard hits your palette first, followed immediately by the buttery, crisp shortcrust pastry. The lime custard is as tart as it is sweet-it makes your face pucker at the first bite and jolts your senses into attention! With every subsequent bite you grow accustomed to the sourness. You start appreciating the contrast of the creaminess and the crunchiness, as well as the fragrance of the citruses-lime and orange in our case.
Follow this recipe and you will be gifted with a tart better than anything you can buy from a shop-that is because the tarts sold in most pastry shops in India are made to have longer shelf lives, and they skimp on the butter. They also rarely bake the custard in the shell, choosing instead to make it separately and pipe it in once cool. It certainly makes for a more substantial (and impressive) presentation to serve one large tart to your guests and cut it into wedges at the table, than the small mini tarts that are usually available in pastry shops. We hope you give this a try while the weather is still cool. DO NOT attempt this in the warmer humid months.

True.. Haven't seen such finesse in any RU-vid Videos. My 11 year old son will offen steal my phone to watch your videos esp because he feels the need to salivate at times and every minute detail is so perfectly taken care off.. That includes the background music

Lemon tarts are the best. I make mini ones and they are gone in no time. My family and friends love them. They do take up a bit of work but so worth it. Hope yours came out well:)

I have been searching for the best lemon tart recipe since the lockdown. I mainly looked up foreign bloggers for recipes but found yours to be the best! It's like I searched the entire world to find the perfect one right in my backyard! I love the way you have mentioned details like resting the custard, using a fork to incorporate the crust and so on. Though I did lose patience with the crust after a while and did not refigerate it as much but the custard was perfection!

A small suggestion : as your video quality is excellent, the cherry on the cake for me would be if you could add some trivia about the dish or something about the history of the dish or its name. You could add it in the video or in the description. Love your work btw. Keep it up.

I see the Jug used for heavy cream and say 'hey maybe this is the one I saw in the Steamed pudding recipe'! I have no idea why I got excited about that when I am in the middle of rushing to office and have a sense of triumph when the tart came out so nice at the end as if I baked it !! Such a great video! Thanks for all the tips ❤️The only thing I would change here is, I would reduce the baking time for the tart shell by a few minutes so that it's not so crispy. I like the bottom of my tart to absorb some of the moisture from the filling and be a little "soggy" I guess.

Thanks for this recipe. I followed the same method as described in the video to make the pastry shell. Now this will be my standard tart base recipe. I feel the plastic wrap makes things so much easier. It is not essential, but important. Also the pointers about the temperature are very, very vital. I filled the tart with a condensed milk and lime juice mix instead of the lemon curd you have suggested. It was delicious. Thanks again, Bongeats!

The grating tip was amazing!...I make pies often and in the hot and humid climate of Kolkata..it usually is a tedious process if one does it by rubbing the flakes of butter in with their hand as it has a risk of melting and making the dough gooey. U guys are amazing. I learn so much.:)
