I made this pie - It was amazing. Fun Fact - (I screwed up my original attempt - I used cream of tartar instead of cornflour for thickening the lemon curd - oops), this caused it not to thicken after 15 mins, and for it to taste really odd... My second attempt, I paid attention and used cornflour for the lemon curd (lol), and cream of tartar for the meringue (as I was supposed to, before I stuff it). It came together brilliantly! Seriously, my family was beyond impressed - I don't think they've had anything as good before. I used fresh products, and gave it to them the morning after it chilled in the fridge. Quite an amazing recipe! 10/10!!

Following along with you and it's going great. One thing, DON'T ignore the pre bake pie instructions. It will slide down. It's not ruined but the crust is just a little stubby 😅. But everything else is ahh mazing

I really love citrusy desserts. One little tip I got years ago for juicing lemons or other citrus fruit is to put them between your palms and squeeze while rolling before cutting and juicing. It breaks down the membranes letting more juice out with less effort with the juicer.

1/4 Cup of cornstarch is 50 grams, not 25. His other video for this pie also calls for 1/4C cornstarch, and was correctly stated as 50 grams. It’s kind of important. Use the 50g for great results. This is a delicious pie. Thank you for the tutorial.

uhhh this looks nice!!! here in Chile we make Lemon Pie with a condensed milk filling! usually 1 tin of condensed milk with 4 yolks and you cook it in the oven... I am definitely going to try this recipe!

As a beginning cook, overly cautious about curdling egg yolks, I made this pie and didn’t bring it back to a boil with the egg yolks. There is an enzyme in the egg yolks that breaks down the thickening properties if it’s not brought up to a certain temperature. The result is a way-too-thin lemon filling. The cornstarch prevents the eggs from curdling, making it safe to bring up to the point when the filling boils. It actually kind of burps because it’s too thick to boil. It was years later when I learned from Shirley Corriher’s book what happened.

John, I am so delighted with you and this recipe! I gave up trying to make meringue years ago but after watching your video decided to give it one more try. Till i saw this video i cant think anything but this pie 😅 i have no idea what it tastes like but must be fantastic. Anyway i gave it a try. Dough and the filling was fine but i overmixed the meringue, got my lesson. My question is when i bake it, after it cooled off, should i keep it in fridge or room temperature and should the plate be covered or not? @preppykitchen Thank you

Amazing!!!!! So so so good!!!! I've made the recipe from your last video on this - the BEST! Can I ask a question? In your 2019 lemon meringue pie video, you add the granulated sugar slowly into your meringue, but you also heat up a sugar mixture up to 240 and then also mix this into your meringue mixture with some vanilla extract. In this video you omit this step, would you say that's no longer necessary? Just stick to adding the granulated sugar?

Do you have any advice how I can adjust your recipe without ruining it lol. I’m a good cook, but I have no experience in baking and I tend to adjust recipes and that’s why I’m not a good baker. Maybe it starts as 425, then when he takes out the foil with grains he sets to 375 till its golden, I did another of his pie crusts that was like this, but I don't know if this one here is different

It's my first time making a meringue pie today and I decided to try Prepp Kitchen's recipe. Let me tell you, just because the thumbnail looks good or the video has more than 100k views doesn't mean the recipe turned out good. I followed his recipe to a tee, my meringue pie came out looking perfect after baking but it started weeping as it cooled, and the custard tasted way too sour. His pie crust recipe was good tho I did some research online. Apparently, meringue pies will weep because of interaction and temperature differences in the enclosed environment between pie filling and meringue. It is best to use Italian meringue instead of French meringue. Putting the meringue on a cool filling will also cause it to weep. make sure to start your meringue when the pie is still hot. The heat of the filling will start to cook the meringue, and you will have fewer problems with weeping and the meringue shrinking. Overbaking the meringue can cause weeping, as can making a meringue pie on a hot, humid day. Humidity is death to meringues. Lastly, always make sure the edge of the meringue is right up against the crust. If you leave space, the meringue may shrink as it bakes. When it shrinks, the egg whites can squeeze out tiny bits of moisture.

What if you fill the entire pie shell with ceramic pie weights? Does that do as good a job of supporting the sides and preventing their shrinking? John, you are a presence at many of our dinner parties-- in friends' homes too. Thank you for improving our baking.

0:06 Honestly, this one ground my gears a bit. Sometimes the video directions don't exactly match the recipe. For example, I just followed the link which states "425 degrees," where here you say "375 degrees." In the video, you used 5 egg whites, saying "You don't need to use it all!" In the link, you say only use 4. I did use 4, and it wasn't enough meringue. I super appreciate every recipe you've posted for us amateurs. But you're definitely having a quality/quantity issue, my guy.
