This frigid weather has is thinking alike. Bought the stuff for a pot roast to make this weekend. I always try to brown mine first ( kind of a pain). Will try skipping that step like you did.
Kaleb, Thank you! I'm anxious to try this recipe. Every recipe I've tried always says to sear the meat first. I cannot stand doing that becauset it makes such a mess! I've never ever felt confident in my ability to cook meat that well. I'm scared it will be overcooked and dry or undercooked. This seems to be a winning recipe and I cannot wait to try it!

This is so high effort. I'm going to be honest, I always do a super lazy roast. Flour and brown the meat, make a thin gravy from store-bought mix and some of the leftover seasoned flour in the same pan (some cooking alcohol if I have it), with some garlic, sage, and rosemary added in, deposit the meat in a vessel with baby carrots, small potatoes, and quartered onions (I'm the opposite way about vegetables, and can't stand them crunchy) and pour the gravy in. ...though, yours looks a little more dry than mine.

Okay, Kaleb, I'm making this right now! ✅ I don't have one of those fancy Dutch ovens, only a stainless steel one, so I'm going to transfer to a stoneware baking dish. 🤷♀️ I need to invest in one of those. I have an iron skillet but that thing is a pain. Does it need a lid? I don't think I have one and I'm out of foil. 😑
Have you ever tried adding 1 square of Baker's semi-sweet chocolate to your roast gravy as you cook it? It melts down and adds a richness of flavor. Just try it to see.
I never have good turn out with beef roast.. .. I'm 65 y/o.. lol. Well, I shall continue to try. With being able to watch this, helps. what temperature did you cook the pot roast at? - The amaryllis caught my eye because of the dark colour, do you remember the name of it please. Looks like a yummy meal.

Looks great, but I have a question about the meat. Why didn't you dust the meat with flour and sear it before cooking the mirepoix so it can be thickened that way ?
Once the roast is out, use a wooden spoon or spatula to scrape the fond off the sides into the sauce. So. Much. Flavor. (Tip from Americas Test Kitchen.)

How much does chuck roast cost in Iowa? A 3 lbs. cut of boneless chuck roast at Safeway's in California is $26.97. Not cheap! Maybe Kaleb's family farm raise their own beef cattle?
