Taking Cooking food back to basics.
Ingredients serve about 4-6 people.
- 1 whole chicken or equivalent in chicken parts
- enough chicken stock or water to cover the chicken completely
- 1 cup of pearl barley, rinsed amzn.to/3u6mgQM
- 3-4 large leeks, cleaned and sliced into 1/2-inch pieces (use white and light green parts only)
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 bay leaves
- A few sprigs of fresh thyme (or 1 tsp dried thyme)
- Salt and pepper, to taste
- Optional: 6-8 prunes (traditional but can be omitted)

Nice on Rik. My mum used to make this regularly (I am originally from Scotland now live abroad), tbh I make a lot of soups but have never thought to attempt this. I will definitely give it a go. Really genuinely enjoy your channel and recipes and again genuinely have a go at lots of the recipes. Always perfect.

Terrific! Subscriber from Calgary, Canada. When I was a kid in northern Manitoba, we'd eat stew at least once a week, made with beef or moose meat. The veg in the stew were potatoes, onions, carrots and celery, chopped like you have. Our stew is like your cock-a-leekie soup, filling, warm, easy to make. Real food. Thanks for a lovely video.

Great recipe the soup reminds me when I was a kid in the 60's. For a treat my mother would get a tin of Cock a leekie soup to share between my mother sister and me. That was our meal for the day with a tiger loaf of bread.

I am 71 and have never tasted a leek in my life. But, I now know how to prepare it and cook with them. So, this looks like a good healthy warm you to the toes soup. Will need to buy leeks! Thank you!

Followed your recipe to the letter. We just finished eating it. A GRAND SLAM Rik. Used the barley and the pitted prunes. The barley added a creaminess and thickened the soup. And yes, chunking the veg was the way to go. Great for a frigid day! Keep em coming Rik!

As if by coincidence, but I made ours yesterday. A few changes from yours - no onion (the wife hates it), include celery leaves chopped, and potatoes not barley. Also fry the chicken first for a few minutes before adding celery and sliced carrots and then stock. Also added dried parsley. Also peas at the end, but no prunes. That's our way and it's a regular, nicer the day after. Yours looks good though and I may try it next time.

I love barley one of my favourites was lamb shanks and barley soup. Yum , now the price of lamb shanks is out of the question here in Australia 🇦🇺. I blame MC and similiar cooking shows, all our cheaper cuts have sky-rocketed 🤣👍💜🇦🇺

Cock-a-Leekie...Chicken Rice...Chicken noodle. Chicken soup, in whatever incarnation is going to be good. If you used smaller pieces of chicken, everyone would have a piece of chicken, bones and all to grub on as they pleased, real rustic style :) I prefer leaks over onions any day, green parts and all. The addition of barley is so Scottish, and brilliant, barley is delicious. Thanks for the vid Rik.

I'd heard of Cock-A-Leekie, everyone has, but I wasn't motivated to make it until I saw Rik do it. Why? I don't know, I guess he just makes everything seem so easy. Well I finally got around to doing it two months later and I have to say that it was far better than I expected. I was quite hesitant to add the dried prunes but my wife insisted and they made all the difference. DO NOT SKIP THE PRUNES.

As I write, I am eating my first bowl of Cock-A-Leakie. Delicious, Hearty, it's filling enough to give me another meal option. I can't eat potatoes or barley, alas, so I substituted parsnips and Shiritaki rice. (Prunes are out of the question, any dried fruit.) I've made chicken soup countless times over the years, typically from the carcasses. Yours is better than any of them. Thanks.

Fantastic, chef. Pearl barley is so good in so many things. I always use it in leek & potato soup made with Xmas turkey stock. Cock a Leekie and crusty home made bread for me tonight! Love the channel & the way you cook. Unfortunately, I keep getting unsubscribed.
