Ingredients:
175g / 6½oz Self raising flour, If using plain or all purpose flour add extra 1½tsp baking powder
120g / 4½oz Granulated sugar
175g / 6½oz Vegetable or Sunflower oil
4 Large eggs
30g / 1oz Desiccated coconut
1tsp Baking powder
1tsp Vanilla extract
¼tsp Salt
Jam and extra Coconut for topping

Thank you John for your wonderful cake recipe. I’ve continued making this cake for over a year now. My children, husband and friends love this cake. I have also experimented by adding chopped mix nuts with desiccated coconut and it comes out very lovely, full on and very delicious.This is my family best cake. Thank you so much for making your recipe so easy to follow. Even though I am 65 years old I am a novice at making cakes. And like you say you can make this into several different variations. I use a granulated artificial sweetener in your recipes still turn out very well and it makes it diabetic friendly.

Hi, thank you so much for uploading this recipe. Ive made it twice, one with almonds and one with mixed fruits. Its amazing, so light and fluffy, i used coconut oil instead of veg oil. My hubby loves it. Its a great recipe, cant wait to try more of your recipes xx

Hello. Thank you for your recipe. I've made it today for our coffee/tea time. It turned out very good! soft and moist. I reduced a bit quantity of sugar and oil, and add more shredded dry coconut and diced fresh coconut meat, they're giving more texture in the cake. The whole house smell good! Have a good day John!

I followed your recipe yesterday and it turned out really great! My husband and I enjoyed the cake so much. I used coconut oil instead of vegi oil, and I put coconut flour instead of desiccated coconut (I doubled the amount - put 60g instead of 30g just because I love coconut taste and as an experiment, and it turned out nicely!). I will definitely use your recipe again! Thanks for the great recipe!

The recipe turned out so well and was gobbled up very quickly 😋✨ Our heating furnace shutdown yesterday and needs replacement now, but I was still able to bake so …the service guy went home very happy with three big slices of this cake late last night. He’ll be back on the weekend so I plan to bake another to have ready for the crew! Thanks John! 👍

great recipe, the first time I made this it was a bit dry, not sure if I over cooked it, yesterday my daughter made this( we have a baking contest every so often) and hers was the winner it was beautiful, so delicious and moist

The last time I made strawberry jam I added 1-2 tsp. Orange zest to it. It really brightened up the flavor. Thanks for the cake recipe.
