咖椰(Kaya)的名称由来是早期-海南人在海外制作的椰子酱.海南人称呼的语言 (搅椰)
慢慢形成了这个名称 (Kaya) ,马来语: Kaya其实是富有。
马来西亚-海外华人的早餐,(咖椰)是东南亚一代非常普遍的抹酱 ,抹在面包上搭配梳打饼,同時搭配著吃的還有半生不熟的雞蛋,再搭配一杯香醇的南洋 “kopi” 咖啡乌或 Milo 美禄,就是一份美味完美的早餐了。
配料: Ingredients
10 条班兰叶 - 10 Vegetables Pandan Leaf
4粒鸭蛋 - 4 Duck eggs
250ml 椰浆 - 250ml coconut milk
250 克 椰糖 - 250g Palm sugar
3 湯匙水 - 3 tbsp Warm water

[還記得小時候每次媽媽做好kaya,都會忍不住用手指頭沾上一點,送進嘴裡感受到的是很濃郁的椰糖以及蛋香味。這個就是我童年的味道 ] 身處異鄉,很懷念以前吃媽媽自製kaya 本想說利用週日的時刻上來RU-vid找kaya食譜以及教材 向來心急的我在尋找食譜的時候,只會選取重點觀看,然後關閉 您的言談舉止讓我回想到以前在kampung與隔壁auntie/後面村的阿姨相處得日子 就是道地的馬來西亞人情味 這二十分鐘的影片,是沉浸的享受。 教程非常的仔細 備好料,下個休息日就讓我回味一下以前偷吃的好滋味。 以前媽媽總說【煮東西要用心,東西才會好吃】。今天我總算領悟到了

I made the kaya. I used boxed santan instead as I cant get the fresh one. It still turn out well. Texture is smooth. So happy as this is my first time making kaya. Thanks Mrs Liew for making everything so simple and you are so encouraging with your words. I also cooked vinegar pork trotters today too, my second time cooking this dish! So happy to have found your channel.

Yes my grandfather used to make huge amount of kaya the traditional brown ones because he owned a coffeeshop. He used double boil when cooking kaya and non stop stirring using a long wooden stick. Stirring is the key to smooth kaya. I never knew kaya is hainanese 😅 Nice to hear you speak hainanese.

I just make my first kaya. I follow your recipe to the dot and the kaya came out smoothly... Sedap!!! I took my inductor cooker to the living room, stir the kaya and watch movie. I think the fire is put lowest thus I took close to 2 hours to thicken the kaya😂😂😂 Thank you aunty Liew for the recipe and techniques❤️❤️❤️. One recipe down. The next one is sambal😄😄😄

其實我是超不喜歡看時間很長的烹飪節目(囉嗦、拖泥帶水、不扣題)。3分鐘是我的極限!教學方法就是要精簡、精準、精確和快速才能符合我們都市人的緊湊生活!否則,看了會乏悶,一直快轉。哈哈哈!但自從看了大姐的湯圓教學視頻後,我就訂閱且都會追看大姐的教學視頻。隔著屏幕,只能視吃(流口水🤤),但也能深深感受到大姐的熱情、熱忱、熱切教好烹飪的基本功。也非常欣賞大姐的處事待人,對長輩恭敬,對後輩諄諄教誨!謝謝您(我是怡保人🇲🇾) ps 也感謝LIEW導演

I am Hainan mai. In East Malaysia, we either toast or steam the bread and then spread butter n kaya on the bread. We call it "roti kahwin". Favourite of all. Yummy.

@@KLLIEW 谢谢Auntie的指教,我会一边玩手机game一边看火搅拌的了哈哈!我买到的班兰叶是一小袋的,只有差不多20条,闻到还算新鲜,Asian store的老板娘说保鲜袋装好放冰箱可以放差不多10天到两个星期,我打算做一次Kaya再做一次auntie教的椰糖椰丝卷就差不多了。

@@KLLIEW Mik, 班兰叶买回来整棵沖水去除外面的泥沙,記得整課不要撕片呵! 水乾后先用kitchen towel包 再用aluminium foil包,放在冰箱蔬菜格大概可以收两个星期。我嫂嫂住加拿大很难买到班兰叶,这方法是她教好的。 我試过0K 味道呢! 肯定没新鮮摘的香。Mik,你有地方种 随摘随用 好羡慕!

Sebenarnya, nama kaya lebih mungkin diambil dari perkataan sangkhaya yang dicipta di Kerajaan Ayutthaya, Thailand pada kurun ke17. Orang yg ciptanya ialah seorang wanita kacukan darah Siam, Portugis dan Bangla. Manisan ini adalah sejenis kastard (telur, gula kelapa dan santan) yang dikukus. Manisan adalah adaptasi manisan kastard Portugis. Pada masa itu, Ayuttaya adalah kota perdagangan purba Siam yang penuh dengan pedagang India, Melayu, Portugis, Belanda, Cina dll. Kini di Thailand sangkhaya masih digemari ramai. Di Filipina, ada sejenis jem kelapa (matamis sa bao) yg dibuat daripada santan dan gula molasses. Ia tidak gunakan telur. Orang Filipina mempunyai budaya berasas Melayu. Tapi Filipina tidak pernah dijajah orang Portugis. Itu mungkin sebab telur tidak digunakan. Di Samoa, ada manisan siamu popo yang mirip matamis sabao. Kesimpulannya, kaya pada mulanya adalah manisan kelapa tanpa telur orang asal Asia Tenggara. Ada pelbagai nama cth. Tapi bila telur jadi satu ramuan ini, ia dipanggil sangkhay... khaya..kaya. Setahu saya, orang Hainan kurang guna telur sebagai ramuan manisan aslinya. Sebaliknya pulut ada ramuan utamanya. Jadi, kita harus berterima kasih kepada orang Bangla sebab orang yang ada darah Bangla (Bengali) mencipta seri kaya yang menjadi kegemaran orang Malaysia.

Thank you, Ah Mai . Now I know kaya is a hainanese word . I remember my husband's grandmother added a piece of ginger to the kaya when it was done. The aroma of the kaya was very nice . However I hv seen her cooking kaya one time only and I cannot remember how she cooked the ginger. Is the ginger roasted over fire or fried in oil then add to the kaya? Also my hainanese friend asked if I have drank hainanese soup made with cabbage n green peas (I am cantonese n hubby is hainanese). Is this a hainanese dish too?

Hi, the ginger slice (raw) can be added when cooking the kaya or added when it is done. The Hainanese soup is indeed a Hainanese dish, it is a chicken soup with green beans but it is not commonly found nowadays.
