There are many types of rice puddings in the Thai dessert repertoire, but this one is an absolute classic. Longan is a juicy, sweet, aromatic fruit that goes so well with the rice pudding. It's a comforting, satisfying, warm dessert that is also a ridiculously easy recipe that you really cannot screw up. It is also gluten-free and vegan :)

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. Pailin's Kitchen i see you say about not getting fresh fruits for desserts like longan, jackfruit, young coconut... in Vancouver... try at small grocery stores in Fraser street - 49 the blocks have loads of Thai options ........ 😍😍😍 love you cooking so I hoped it would help you

To all Indians Watching this...Pandan leaves are called Kewra Patta all over India...Kewra water/ kewra jal is popular for it's use in Biriyani, it is what gives Biriyani a sweet, fresh, heady smell.

My friend has a longan tree which bears ridiculously good logans with tiny seeds and super thick flesh. Now I'm thinking of sneaking into her house to steal some longans and make this dessert.

Thank you! I have been wondering what to do with the longans. We live on a longan farm, so every summer we are buried in them. Unlike North America, sugar is palm unless specified, rice is sticky, unless you say Khao Suai. I am thinking I could cheat this a little by reworking the Khao Niew sitting in the cooler bucket. Super easy. BTW, if you like thicker coconut milk, stir in s little instant coconut milk powder. Also good for thickening curries, where you want the coconut but not the water.

Yum! Another good rice to use is carnaroli. It's not the same, but still really good -- after all, risotto is basically savory rice pudding.

@@davidmolloy126Dear David. If you can't find pandan, just leave it. Pandan has no favor in itself. Thai cuisine use it to add fragrant, so leave it from any dishes (mostly dessert) would not spoil the taste. Just lack the smell of pandan. Or if you could you might use vanilla or other fragrance extraction instead.

It says on the label of the rice "Milagkit". In the Philippines, we call it "Malagkit" meaning Sticky.

No longans & lychees taste very different from each other - also very unique flavours which other fruits dont have. I hope you will get a chance to eat them fresh - amazingly sweet & so different from oranges, apples etc.

Have you tried/made a traditional western rice pudding made with milk/cream and short grain rice? How does it compare? I would be tempted to finish cooking the rice with coconut milk to try and get it more creamy like a western rice pudding. Would that be a mistake?

It's the old style to put coconut milk together with water when boiling sticky rice and some Thai people still do it nowadays. No mistake.

Sticky rice is not that different from a risotto type rice or pudding rice, a little more sticky though. You could definitely use western style short grain rice and it will be a nice dessert. As to cooking you could start out with milk and then add coconut milk, take it from the heat and let it steep to make it real plump. I wouldn't use c milk from the start, all that cooking doesn't do it that much good.

Stef Hendrik Yes makes sense. I have noticed in curries that coconut milk loses it's flavour quickly if you add it too early. I am not really a fan of sticky rice. Haven't used it that much but when I did it seemed to dry out very quickly. It's almost as if it uncooks itself. Prefer Basmati rice any day.

She said it would "clash" too much. But if you like lychee, why not? I've never heard of longans, but I guess it wouldn't be too hard to find a can of it.

You could steam it first for 20' over water and then add coconut milk, heat it and let it steep for an hour. That's how I make Khao niaow mamuang (sticky rice w/ mango).

Longan is a tropical tree fruit_ it tends to to round, covered in brown skin and very sweet. Lychee is bigger tends to grow in the more temperate China_it tends to be heart shaped not fully round, has green (unripe) to red (ripe) skin, and has more tendency to be tart as well as sweet. Their flavour profiles are very different imo as well.

They are in the same family of fruit but not the same. If you're in a pinch and can't find longans lychees would probably work.

They aren't the same fruit, but any good Chinese supermarket should stock both. Both lychee and longan are common east asian fruits.

cHemon King Mango Thai is blended Mango topped with whipping cream. It's very popular now in Malaysia and Indonesia. I think it's dessert from Thailand.

Askee Beema Based on the description and photos that I saw, I don't know that this thing exists anywhere in Thailand. I might be wrong though. Maybe it's made by some dessert cafes that I don't know about. In summary, I believe this King Mango dessert is not a traditional Thai dessert, or anything Thai people in general are aware of.

That Dessert dish originated in Spain. Then it was taken to South America with the Spaniards. Then the asians and Indians applied it to their diet. It's in the history books. I will send you the historical facts. It is a dish that was catered to the geographical environment. That is why every culture makes the Dessert a tiny bit different.

Israel Chavez Jr Gonzalez Would it have connections to the the Filipino ‘Champorado’? There’s a rice pudding in the Philippines called ‘Champorado’ which is a sweet-chocolatey rice pudding :P It’s based from the Mexican ‘Champurrado’ which is a chocolate drink made with cacao and cornflour. The drink was introduced to the Philippines via the Mexican-Philippine Galleon trade and the Filipinos used rice as it was easily available compared to corn.

Kuya Leinad Yes, that Mexican dish was also branched off the Spaniard rice pudding dish. The natives just added the chocolate. And the Filipinos adopted it. During the conquest era. Everyone connected via letters and black and white pics. Not like us, cell phones. There's historical books that contain these letters and pics to demonstrate the evolution of food. But all cultures have their own delicious authentic self created food.

Ancient Thai people have had sticky rice for thousand years. It was so easy to create this menu just put sugar and coconut milk in. I don't believe that we have influenced by Spaniards. It's ridiculous!!!!

Israel Chavez Jr Gonzalez The Mexican dish was more of a drink though than a pudding :/ Apparently the drink was around even before the Spanish reached the Americas. The Filipinos probably just combined the Mexican drink and Spanish Rice pudding to make the Filipino Chocolate rice pudding :P
