I make these but use espresso powder instead of instant coffee. It seems to dissolve better for me.

Can I cancel the glucose or substitute it with something else? If yes, what are the alternatives?

The glucose syrup makes the texture more smooth, but you can replace it with sugar :)

Can i use milk instead of cream

I’ve never tried milk, but I think it should work. Your result won’t be as creamy and maybe a little more runny than with cream.
