Yes, coffee. Combined with some brown sugar, coffee makes an excellent rub on this pork shoulder. After a bath in maple smoke and double wrapping in foil once the internal temperature reached 160 F, I let this juicy hunk of meat continue cooking to 195 F internal so that it could be pulled and made into pulled pork sandwiches with a sweet BBQ sauce.

This recipe is a hit with my family. I was a little leery, but it turned out great and works with a variety of BBQ sauces.

I don't drink coffee but love the smell. I don't like coffee flavor on or in my food but do love pull pork.

It is becase pork and coffee shared 79 flavour molecules... the next flavour closer to pork is beef, beer or tea. But the processs of cooking, quality and quantity of ingredients + another aroma compounds (aka the recepie) are crucial.

I love seeing your reactions when you taste the food! Definitely gotta try a coffee rub. Also, you should talk your wife into coming on video and showing how to make the sauce! Or if she’s anything like my wife she will definitely not agree to being on video and you can just make the video yourself. I’ve always wanted to try making my own sauce. Been binge watching your videos, Ry, and have been enjoying them. Keep it up!

I know you’ve done shoulder in different ways and I just watched this coffee/brown sugar rub video. How does this compare to your other cooks of shoulder. Out of all the different ways you’ve done it which cook/rub method was your favorite for taste? Thanks

I think it was maybe 1.5 to 1 Brown Sugar to Coffee.

I love coffee and love pork shoulder but have never thought of combining the two. It honestly does sound like a weird combination. How much does the coffee impart flavor on the meat, or is it more of a building of crust(bark) that has folks doing this? I'm REALLY interested in the response, because I now want to try this. As usual, awesome video Ry!

The flavor was really enhanced with the bark, in my opinion. And it's a surprisingly nice flavor when combined with some sweetness like brown sugar :)

@@CookingWithRy I'll for sure try the combo with brown sugar. Also this is the one I'm gonna experiment with marinating it in pinnaple juice and apple juice. I'll let ya know how it comes out. I'm gone rub it with the coffee and brown sugar

That's really a taste thing. I think coffee goes better with sweet ingredients. You could give it a shot and see :)

PappyBadger I bet cherry wood would be awesome. Gonna try in the next couple of weeks and think I can find some cherry, I also have maple so I might mix the two.
