I do a pepper Jack and sharp cheddar in my Bradley cold smoker - just did a couple pounds about a week ago . Vacuum pack and let it set in the fridge for a least a month - the longer the better I have found . We just finished off some pepper Jack I did last January- excellent.

Been wanting to try this in my lone star pellet grill. Thanks for the info. Do you freeze it after you let rest for 2 weeks in the fridge or freeze or after you vacuum pack it?
