To answer your question about Texas Roadhouse: I live in Arizona and we have a texas roadhouse, yes they do dance at random times. For birthdays they do something different they will pull out a saddle and have the birthday person sit on the saddle while they yell out there is a birthday in the house and sing to you.

line dancing is a big thing in roadhouse. i work at one and we don’t line dance anymore. but they do dance lessons as like a paid meeting before open (at least when we did it). for birthdays we yell “ATTENTION TEXAS ROADHOUSE WE HAVE A VERY SPECIAL BIRTHDAYYYYY” and we bring a saddle to make them saddle up finish out yell and they have to yell yeehaw when we count to three. for me if they don’t yell louder than me then they do it all over again. (at least that’s how we do it). we do that for birthdays or any special occasion like an anniversary or something.

They do the dance when the Texas Roadhouse songs come on. They're specific songs that they use for advertising, so they play them at the restaurant so that when you see an ad there's a subconscious connection to the last time you ate there and the experience. Seems like a fun way to entertain guests, but its actually a marketing scheme lol.
