Because a coloured substance appears to be of that colour because it absorbs the complementary colour. So that the colour of the substance is reflected and reches our eyes. e.g.: A red coloured substances will absorb the blue-green colour from the incident white light and rest is reflected. In the reflected beam due to the absence of the blue-green colour, red colour will become more pronounced and will reach our eyes. So we will perceive the object as being red coloured.
