Actually, a line of Robin's dialogue gives you permission to cut down the trees around the Mountain area, so if you only cut trees there, it would technically be legal

I always felt that when you get the junimos or Joja Corp to release a stream from the mines that pours minerals into the river, lake and ocean it must be some kind of environmental issue.

Licenses will vary depending on location. It could be that stardew valley is in a location where you don't need licenses to go fishing or mining.

There’s actually some mods that add taxes. All it does is take some money out of your wallet, but it increases exponentially based on your profits; just like in real life

Few ideas off the top of my head: 1. If the explosive ammo is considered high explosive, there’s probably some sort of law broken there 2 and 3. Permits needed for fish ponds and leaving crab pots out too long 4. Digging up significant historical artifacts and not reporting them 5. Digging up vertebrate fossils and keeping them 6. Is the desert casino legal? I dunno… 7. I think there are limits to how many foraged good you can sell without a permit 8. You can definitely launder money through Pierre, right?

Mayor Lewis is the one who collects the items you put in the shipping bin, so given that he's the one who collects everyone's taxes, it's possible he just deducts income tax from what he pays you for the stuff you ship. That said, if you're receiving money from villagers for bringing them items, selling stuff to shop owners, or otherwise making money during the day, that's income that you're failing to declare.

At least in US, you can manufacture explosives for personal use. There's rules about quantities and how long you can have them and transporting and selling them are big no nos. But the farmer crafting a small bomb to blow up rocks on their own farm could potentially be just fine, so long as the state or municipality didn't have any additional laws prohibiting it. But then on the other end, you could go way further with all of the "selling X without a license" laws. Many states have "cottage food" exemptions, but once you get in to making enough money for it to be a business you have to have licenses and inspections to sell practically anything that is intended for human consumption. I just assume the Ferngill Republic, or at least Stardew Valley specifically, has extremely lax regulation precisely so that players don't have to deal with that sort of thing.

You know, I've been digging and it's the Governor of your unnamed state that you poison at the Luau, and that is a crime in and of itself apparently. Assault or (attempted) murder of a government official is a pretty serious offence and you can be charged with it in addition to the other stuff that you did.
