Heidi, I sure love learning from you. I am getting ready to try to make vinegar for the first time, I get a little nervous making something without having someone next to me which I think is odd, because I love to cook and don’t mind new things. So I’ll just set you up on my counter and we can be together, lol. I would like to get as comfortable as you, so I can teach my family and friends. Thank you!

This was well presented. I always know it’s finished when it tastes like vinegar. I’ve had 4 scobies develop in different fruit vinegars. I keep them in a mason jar and keep some vinegar over them, then add them to other vinegars. I just keep reusing them. Another note, all my wines are finished, bottled and stored. I’m making lasagna this week and can’t wait to try some in my sauce. Many Blessings!

Heidi, when I learned from you a long time ago how to make my vinegar, I had a problem, and I added more sugar, and I thought it was dead! and threw it away, so I reached out to you and tried it again and been making vinegar with success. Thank you for another great video, touching on how to not to get discouraged if you vinegar. Thank you, Heidi, for another great learning video.

Heidi, I've been making apple vinegar (not apple cider, just apple), and I learned the most about how to do it from your videos. It is absolutely DELICIOUS, and I will never buy vinegar again! It's fantastic in a salad--so much flavor. So thank you for these videos! 🧡

Heidi to the rescue again. I've been making vinegars for years. We moved to a different farmyard this year. I haven't had a successful vinegar since. I've got a few tests to do now but I'm leaning towards my really hard, rusty well water being the culprit. Thanks, at least I have a good list of things to test to see what's different here. I had lovely soft water at the other yard

Hi Heidi! I found your channel on "accident" the other day and Ive devoured them. I've even began my own vinegar. Orange peel and rosemary I hope to use for cleaning. I've completely enjoyed your videos! I'm learning so much in my big ole 51 numbered years! We don't share some of the same beliefs or ideals and usually I'm not able to listen to a person who is religious. However, I feel that you're the "real deal" and understand what your religion is really about. Compassion and acceptance. ❤ Thank you so much for all these videos! I'm getting a master class.

This answered many of my questions. Thank you! I had thrown out one of my vinegars yesturday. It had that crinkly mould on the top and after a month, no bubbles. I think too much sugar was the problem. I think I might have over sugared my fennel vinegar too. Its developed a scobie but it doesn't taste even slightly acidic.

My current batch of apple vinegar has been going since Oct. 21. It bubbled nicely for a couple of weeks, after a couple more weeks I strained out the apples. Now, almost ten weeks after starting, it is still not vinegar. I'm not overly concerned, because I keep my house cooler than most, but I am getting impatient! Also, for those who have no alternative to municipal water, I would add that many cities now use chloramine rather than chlorine, and chloramine takes much longer to evaporate.

Do you have a cloth over it instead of a lid. I use mason jars place a coffee filter over it and secure it with the ring. I made apple scrap vinegar. When I thought it was done , the PH tested at 3 and I was hoping for 5 but I noticed it still smelled a tad like wine so I'm letting it sit longer and gonna retest after the 1st of the year.

The way I heard it is that it doesn't evaporate out, period. Back when I had aquariums my city switched from chlorine to chloromine and we had to use another chemical to break the bond between the chlorine and the ammonia. Then they would both evaporate out. I would advise those who suffer with chloromine in their water to use bottled water.

Also, I can’t recall at the moment,but when it’s done, do I put a regular lid on it and store it in my cupboard? Thank you, in advance, for your reply!

@@cindyebner5331 I use 5 because that is the acidity you need to properly can things like pickles to keep them shelf stable once canned. I was happy with 3, this also being my first batch because I was planning on using it for cleaning and throw occasionally in the water of my animals. Once it reaches 5 or greater it is perfect for canning. Anything less is still good for multiple uses. You could stop at 5. Cover with a secure lid and I store everything in my garage where it is mostly dark and cool. Don't get the strips. Get a digital reader. They are less than 10 dollars and have multiple uses like, I use it to test the PH in my soils

@@Stevefor1776 I'm on a well so I don't really pay much attention to municipal water supplies except when I read spring water bottles and see where they source their water from. A lot of bottled spring water has municipal supply sources. I didn't know about chloramine and I quickly read a few things about it. And yes, it doesn't evaporate like chlorine. It's is much more toxic than chlorine although the official narrative is that it is so much more effective and stable than chlorine. It corrodes metals including your copper pipes. It corrodes rubber, like the O rings in your faucets. I'm afraid to think what it does to PVC or Pex. It creates cancer causing compounds as it reacts to the organic substances it's supposed to neutralize. And people drink that! Thanks for that little rabbit hole I took a dive down. 🤔

No honey in mead that sold in the stores....haha....not surprising. Just like sourdough that contains yeast and no SD culture or honey that is corn syrup. Not surprising at all. I have a full gallon jar that is basically one huge layered scoby from my kombucha brewing days. I have been peeling a bit of it off to place on top of my fruit mixture when making vinegar. Helps to hold the fruit down and I figure it gives it a good boost. Of course I take it off to stir, especially in the beginning of the process. Thank you again for the great content! God bless!!

Oh Heidi 😂 I have added some extra sugar spoons to my vinegar! Of course it took an eternity to fermentation. I have tried to make a sparkling drink with dandelion flowers and it ended up in vinegar😂😂😂. Have a great day ❤😊❤

Hello. Thanks for another lovely video. I wonder could you please make a tutorial on how to make vinegar for fish & chips (very popular in Ireland/England). I am no expert on what they use to make it but if you could discover how they do and explain how to make it, I thought it could be a fun video for people to watch, but also a nice present to give to people and perhaps help convert some some to the homemade world. You can use whatever homemade vinegar you want for such things. Apple, pear, peach, garlic and oregano, it is up to you. You do not need to have a specific recipe to use in food dishes but certain ones may have a better flavor for what you are creating. I have a great many videos over the years showing me making videos from herbs, fruits, flowers and even tree cuttings such as cedar and juniper so no need for me to make one specifically for fish and chips. Just think of some herb or fruit you think would compliment the flavor and use that. You can skim it off but it will likely keep coming back until it is finished and you strain then bottle it. It usually stops once it is deprived of oxygen

So, if the vinegar quits bubbling after 1-2 weeks, I should add a bit more sugar since it isn't done yet? Here in Florida it can turn into vinegar quickly = I always test it with an acid test strip. If the test strip color indicates it is 5% can I use it for canning? I also want to try pine vinegar but don't know my pine trees well. Will arborvitae work? I wanted to use it for cleaning. Also, I have a native Sour Orange tree which doesn't freeze but produces massive amounts of the worlds sourest oranges. I've made a delicious faux key lime pie from them but wanted to use the skins for vinegar - it never seemed to work - maybe not enough sugar? (pretty much zero from the oranges) so I have to add sugar. I was going to make a huge tub of it and use it for cleaning and killing fire ants. Works like a charm.

No, you should _not_ add more sugar after it stops bubbling around the two week mark. Please go back and listen to the first part of the video again where I go over that very thing. Adding more sugar when it stops bubbling is one of the most common mistakes and why I covered it

I have not but the measurement of sugar would be the same as for any herbal vinegar so at least 1/2 cup for a half gallon. For a quart, it would be at least a quarter cup but no more than a half cup

Hi there I made vinegar using apple scraps in late October I used a half gallon mason jar I stained it and I was a little disappointed because I didn't end up with much about third of the jar did I do something wrong that you can think of I ? Well I will try and make some more thanks Hedi

You may have lost quite a bit to evaporation or you put a lot more fruit in the jar and less water

I made apple vinegar and gave some to my sister. She tried making some, and it grew worms. I’ve heard of scobe worms or scobe eels. I am larvae phobic. I freak out. Have you ever had this happen and do you know what causes this? They have to come from somewhere, and if it’s a matter of scrubbing fruit more or something I would do anything to prevent it.

I have heard of it and covered it in other videos but have yet to ever get any. Regardless, they are perfectly harmless. I suggest she removes the scoby and tosses it and strains the vinegar through a fine cloth. I do not know where they come from

When I first started making vinegars a few years ago, they came out beautiful. Then I started getting kahm yeast and I have not been able to make a good vinegar since. Each and every time I try, I end up with kahm yeast. It is very frustrating. I really would like to know what to do to avoid getting the kahm yeast.

I found that if I only stir my vinegar once a day, I might get the kahm yeast. But if I stir it twice a day, I don't. Once the fruit stops floating and sinks to the bottom, the yeast usually doesn't form anymore and you don't have to stir it as much. This is what has worked for me.

Yes but if you are buying it, double check to make sure there are no additives. Just because it was distilled does not mean something has not been added to the water after distillation

I have learned from several different places over time that metal spoons should never be used with honey!! The metal will damage some of the healing properties of the honey. That is why you see the wooden spool thingy shown with honey in many pictures. Wooden or glass spoons are the best, in order to protect the honey.

Whenever people make such statements they are always just being general. The same applies to ferments and to bentonite clay. Generally speaking, you should not use metal but it is the TYPE of metal that matters. Stainless steel in ALL cases is a safe metal to use. Heidi, I have never heard you talk about my problem. I started 1/2 gal of apple vinegar it’s been there about 8 days now. I stir everyday. I used peels and cores with good water. It started bubbling in 2 days really good. Well after about day 5 it started bubbling so much that it was running over. When it had lost half of the liquid I added more good water to it. Well it done it again. Now it appears my jar if only half full with liquid again. Is my problem my jar was too full to begin with it didn’t seem to slow the fermenting part down by adding the water. I started with about 3/4 of the jar full. I’m going to strain it after my 14 days of stirring and let it finish the process. Doesn’t seem like I’m going to have very much at the end. What do you think? Should I just throw it out and start over or after I Syrian it add more water?

No, do not throw it out, it is obviously alive and active but you may have had too much sugar or you put too much matter into the jar before adding sugar and water. While you can add more water, keep some space at the top, I do think once you strain it it will calm down

if i strained and closed my jars after it stopped bubbling, because i didn't know it needed more time, can i open them again to continue? or what can i do with it/

Yes, you should e able to simply remove the lids and cover with a cloth or coffee filter for a couple more weeks until it turns to vinegar. If it still tastes sweet and smells like wine, it is not finished. The minimum time for vinegar is one month to size weeks from start to finish. Usually the bubbling stops at around two weeks so this is why my guess is that it needs at least another two weeks

I've got a little experiment going, i have a cider press and make many gallons of cider so I'm trying to make a 5 gallon batch of vinegar in a carboy so after letting it sit for 3 months now it's formed a couple of Scooby's that have sunk to the bottom and now a third is forming, it has a good flavor but it's not a strong vinger so I suppose it will gradually get stronger the more it evaporates so my question is, (do you think i should keep the top open to the air at this point or put a bubbler air lock on it ?

I am guessing it is not getting enough oxygen considering the smaller opening in a carboy. Are you keeping a cloth over it instead of a lid?

I feel ABSOLUTELY TERRIBLE!!!! Last year was the first year that I made nectar with organic cane sugar for the hummingbirds. I thought it would be healthier for them than giving them the non organic. I hope and pray that I didn’t make them sick……or worse!!! : (

I didn’t use sugar in my apple vinegar. In about 10 days I had a pinhead sized greenish speck that I removed. I had decent bubbling but someone told me to throw it out because of the speck. For no particular reason other than I’m lazy, I’ll get around to it, I haven’t thrown it out and it’s about 2 weeks later. I also was told to throw it out because I had used a scrubbed and boiled stone to hold the inverted lid down. The lid was left not totally closed, the rock on that, and a cloth covering it all. So my questions are: 1. Is the speck dangerous? 2. Is my vinegar bad without sugar added? 3. If the rock touched some of the water is it bad? 4. How long is too long to let it go after bubbles stop?

I would not worry about any of that. Vinegar kills mold anyway. I used to not stir my vinegar but never could keep it weighed down so something always floated above the surface and got moldy but it was only that, no mold survived in the vinegar so I would just lift it off and not worry. As far as the sugar, you likely had plenty enough in your apples or apple juice to make it strong enough but added sugar will raise the acidity in the finished product but that does not mean it is bad. I have had some that did not turn out as acidic as others but I use those more for sautés and other things where a higher acidity is not important

@@CrystalandBern For vinegar, once it tastes and smells like vinegar, you should strain and store in an air tight bottle or jar

No, you heard that wrong, you DO add sugar in the beginning when getting it started with the fruit or herbs and water, you do NOT add sugar when it stops bubbling at about 2 weeks.

I was not trying to make vinegar . I put dried fruit pieces in Sunflower oil. After 2 days it smells like vinegar. It us still useful

I have noticed all the channels I subscribe to ..I have to resubscribe every time I watch their video's..yours just now also I see it happening on every channel I watch..this is so aggravating why cant tbey just leave people alone ..I mean they may as well nit have a you tube if tbey are getting that ridiculous!

I’m so confusilated……I have a half gallon jar that hasn’t had any bubbles in about a week…..Also a quart jar…..I thought I was supposed to strain it and put it into another jar once the bubbling stopped…it doesn’t smell as much like vinegar as it did when i strained it out…..what did I do wrong? There was a whole half gallon of it and another jar that made about a pint….what did I do wrong? Should I have left it in the jar with the stuff in it and not drained the apples off it? I don’t want to lose all that what I thought would be vinegar???? Oh no…..what have I done?????

I did cover that very thing in the video above so please make sure you listen to the whole thing. Your specific issue on believing it to be done once the bubbling stops is another common mistake and I went over that part towards the end

@@RainCountryHomestead I saw somewhere that when it was done bubbling to strain it and let it sit for several weeks…..Is my gallon jar of “vinegar” no good now? Should I get rid of it? All my apple cider scrap vinegars have started bubbling right away….within a day or two….do I need to dump them all or can I save them! I think I misunderstood the directions….I’m 74…..UGH….can I do anything to save them?????

@@debichats8634 There is nothing wrong with straining it when it stops bubbling but you still need to cover it with a cloth and let it sit for at least two more weeks. If you put a cap on and did not allow oxygen to get to it, it would not have been able to finish. It might still be saved if you just put a cloth back over it and give it another two weeks
