NOTE on Vinegar Acidity: When doing more research on pH vs acidity, you will find differences in numbers. Some will say non distilled vinegars should read 3.5 pH to equal 5% while others will say 2.5 pH. Some say that distilled vinegars should read 2.5 while non distilled read 3.5. Others quote a general acidity of 2-3 pH to equal 5%. Thus I will still stand by a pH of no higher than 3.5 but can be as low as 2.5.

I had something happen to me at least 20 years ago if not more. A friend gave me a couple of bushels of apples. We couldn't eat them all. I didn't have any way or know how to preserve them. My husband decided to make wine. I don't remember how much of what we used but I cut the apples into one of those big white buckets. I put in a small box of candied ginger. I put in sugar and yeast. I finished up with water. I stirred it and put the lid on very tight. I put it in my pantry. We forgot about it. 10 years later my husband was looking for something.and asked me what was in the bucket. I said, that's the wine we was making.. we opened it. Not wine. But it was the best tasting vinegar I had ever tasted. I don't know what happened. But I know that I can never make it exactly like that again.😂😂😂😂

I don't know if you know this or not but people used to put Pine-Sol in their baths back in the day. Back in 2006 they changed all of the ingredients in Pine-Sol from all natural ingredients to chemical additives and harmful toxic agents. Pine-Sol had the ability to heal and help everyone involved in using it up until 2006 when they initiated the start of their plan LOL😅😅😅 not a very good plan by the way

To date my favorite vinegars are citrus based or fruit-based. I did make a cucumber based vinegar that I thought was going to be magnificent until it wasn't. The scent went from cucumber deliciousness to regurgitated-cucumber-juice. 🤢 I have made a blackberry, strawberry and cherry vinegars. These fruit vinegars are magnificent splashed in a glass of water. So refreshing! my favorite to date is satsuma with added spices like cloves, allspice berries and cinnamon sticks. I used my garden herb vinegar when making beef bone broth and it was GOOD.

I made cucumber water one summer for a nice refreshing drink at a BBQ, someone put the jar back in my truck without telling me or emptying out the cucumber slices. I found the jar a week later, in the summer, in a heatwave, after 5 days in 105+ degree temperatures. I said that twice to let it sink in how bad it smelled, it was toxic, I live on a farm, the things I've smelled are unbelievable but that was worse, so much worse.

Heidi, you taught me how to make vinegar a few years ago. Now I usually have vinegars percolating in the kitchen. Two recently finished are a little jar of black currant vinegar and a jar of fig vinegar. Both were made with dried fruit from who knows when. Both of those were then forgotten in a corner and underwent some dehydration, so they are intensely flavored. 😍

Leave city water out in an open jar, covered, overnight. This allows the gases to evaporate out of the water. Now, me make vinegar too.

I feel as though the angelic angel of canning has swoon me lately & I’m loving every minute of it. Thank you so much for sharing such amazing content as well as demonstrating! Just started 3 quarts of apple vinegar yesterday from scraps which I used honey for medicinal purposes & 3 quarts of orange vinegar today from mostly peels with organic turbinado cane sugar for cleaning purposes. Wish me luck! God is great & I’m thankful to come across all of your insightful material. Thank you sincerely 😊❤️

Goodness, this was published three weeks ago and I'm only seeing it now. I didn't click the bell, so I never get notificactions, I just log in every day - I must've been busy that day! Great timing though, I've got some vinegar going and wanted to double check when to strain it.

I recently had to throw out some orange peel vinegar and I think it was slimy didn't bubble well because it was in a quart jar with too many peels. At the time I thought that was the problem. I appreciate this video. It answered so many questions.

My first try l made an apple /carrot vinegar that ended up with kahm yeast, no big deal…it was perfect after straining. I’m going to make orange peel vinegar for cleaning next. Can’t wait! Thx Heidi!

Thank you God unto all things. Heidi, I so appreciate your presentation of information about vinegars. I have made many kinds, based on these excellent suggestions. I have some old containers of dried fruit peel not used for fruit cake, thats on the list to do. My prayers with you and your family.
