I know he already said in the video there's no difference in taste between wood and propane for pizza. But this is the internet so a lot of people will disagree and swear up and down they can taste a huge difference. This is how it works: Pizza's cook in 60-90 seconds, 5-7 minutes for a long NY bake. 13'ish minutes for a really long Detroit bake. I own a smoker, I put wood in with charcoal and cook ribs for SIX HOURS. If you could get any detectable smokey flavor at all from cooking a pizza for 90 seconds, cooking ribs for 5-6 hours would result in inedible food that tasted like pure ash. And I cook my Brisket for 16-18 hours. Also, in a smoker the wood/charcoal/pellets go under the cooking surface and the smoke rises and penetrates the meat from the bottom. In pizza ovens, the wood is level with the pizza so the smoke rises and never touches the pizza. So even if 60 seconds was long enough to infuse a smoke flavor (which it isn't) it still wouldn't because the smoke never comes in contact with the pizza. I've cooked over 500 pizzas, and there's no difference in taste, the only difference is wood's a whole lot more work. It is an experience some people enjoy, but you're not getting magically smoke tasting pizzas from all that extra work. Wood can give a different look to the leoparding, but the taste will be identical.

For pizza. Yes definitely agree. For pizza. What I will say though is that because of how we identify flavours and smells, if you serve the pizza in the vicinity of a wood-burning fire there will be a noticeable flavour at least in the air. Personally I prefer woodfire hands down over gas. I feel like it's easier to use. Gas you have to regulate the deck temp and the cabinet temp every few minutes, whereas woodfire you can stop whenever you like and then stoke the fire with a few smaller logs and be right back up to optimal temp in a heartbeat. Obviously woodfire takes more skill and effort, but I believe it's definitely worth it when you get used to it, it also makes a warm convivial space that only a woodfire can create; everyone huddled around it. Smoking is definitely doable, it's just down to temp control - which again, is not easy without experience. Get a half decent wire rack and the smoke will penetrate from all sides. I'd recommend the OG dome for anyone that is really interested in learning and cooking amazing food. Simply because - with enough creativity - you can do anything. The S1 makes no sense to me now...just buy the XL Arc. I think the roccbox still has its place, especially in places more susceptible to wind. Even though I have a dome currently, I am tempted by the Arc XL, just because it is so transportable. I think it fits a really nice niche where it can be a stove and an oven at the same time and is light enough to be taken on camping trips.

Go with what you like to use. Many prefer wood for the experience, not necessarily any taste difference. For me, pizza isnt a rush food, and doesnt require efficiency of setting a dial, so building a fire enhances the wait time with a beer in hand. To each their own 🍻

This is true. My pit boss will impart very little to no flavor if Im cooking a hamburger or steak but will impart huge smoke flavor if i cook a brisket for 16 hours

This is the video I’ve been waiting for. So helpful. I’m so on the fence now of getting the Arch now or trying to see if a year from now they potentially for a S1 with the features of the arch. Augghhhhhh. Great video. Maybe I should just build an outdoor kitchen and then see if it comes out next year. But I want it now lol. Great review.

Great video, more importantly...great information. I am trying to figure which oven is best for camping with my airstream, you just helped me with some of those concerns with this video. Would you recommend ARC XL for camping?

I would definitely go to the arc versus the dome for camping. The dome is way too heavy to move around. You’ll struggle with two people just to move it around. The art can easily be picked up with one person. It’s only around 50 pounds.

Really appreciate you doing this follow up video. The price of the Arc XL makes it something a lot more people can afford. I'm one of those people that has been contemplating the Dome S1, but the new features of the Arc seem too good to pass up on. Do you know if a 16" peel is coming out at the launch? Peddling Pizza mentioned a new 12" and 14" Thanks again for all your videos. Love your channel and reviews.

All I am seeing is a 14 inch peel right now the same one that Adam mentioned in his video. I reached out to them this week regarding if they’re going to have a 16 inch version and they haven’t gotten back to me yet.

Good call out, yes i can tell you that each version has improved on the pilot light issue. The S1 is a huge improvement from the ignition of the original Dome and the Arc is even easier to light up.

I agree on the wood subject, I have a ooni karu 12 and managing the wood is a hassle. I’m switching to gas this season. Not sure yet if I just buy the ooni burner option or upgrade my oven. I really like the Arc.

The ooni burner is very efficient, my only complaint is that it is in the back which makes it hard to see how the pizza is cooking in the back and the control is in the back also.

I’ve heard that converting an oven from propane to natural gas is a fairly easy procedure. This is based on some discussions I read on pizzamaking concerning the Blackstone oven. I don’t know why it would be any different for other gas ovens. The procedure involves getting a new metal orifice insert with a slightly larger diameter hole in it because natural gas is more dense and flows less freely than propane. Great video! I watched all of the way until the end despite the fact I’m still far, far away from collecting enough aluminum beer cans to pay for one of these amazing ovens.

Yes i have also heard of people doing these gas conversion's but it's better to call your local gas company to ask if they provided this service or can recommend a licensed professional. There is still a chance it will not work properly as with Propane and you will for sure void your warranty so it comes with some risk.

Great video and overview of these 3 ovens. Can I ask, the chimney on the S1, does it have a cap that you need to remove, I'm asking because I have a shelter with plastic roof sheeting, the Rockbox is fine as the heat exits the front. Cheers.

Yes, the original dome and the dome S1 both have the small chimney with a cap that’s removable on top. If you’re concerned about the roof sheeting, getting hot as long as it’s at least a few feet above the oven you’ll be fine.

Thanks for the video. Very informative. I'm in the UK and its raining most of the time. Now its sunny 10 min later rain. Obviously not making pizza in the rain but if I start doing it and it start raining how would Arc do in the rain? Would it affect the display at all do you think? Thanks! Subscribed!

Yeah, rain is not the best thing for Pizza Evans especially if the inside gets wet, I would highly recommend placing the oven underneath some type of cover or roof if you’re going to be making pizza in the rain if the inside, especially the stone gets wet, you need to be very careful the next time you use it you’ll have to turn the burner on low and let it cure again to assure that you have all the moisture out of it, but if it gets wet you, you run the risk of it cracking in the future

The XL having the commercial-grade side-oriented burner arching the flame with the dome shape is probably the most ideal 'wood-fire' style possible. It will probably be my next oven!

Haven’t paid much attention to gas ovens as I was bent in wood fired and building my own oven. Then I saw a video this morning of a EU fellow with 2 Gozney ovens in his restored Chevy stepvan. Not sure what ovens he’s using, could be a pair of Dual fuel domes. Anyway…, my house isis on a natural gas line and a S1 with the ArcXL features like the new burner for natural gas would be awesome. Propane has a bit more BTU than nat gas but I’m sure they just do an oriface change. Could be something else but that seems to be the only changes I’ve seen between the 2 fuels. A Dome with the new burner would be cool for a mobile use or nat gas connection. S1 for mobile sounds good too. I mention mobile because I’m retiring next year and thinking about a side hustle to augment but I have plenty of house work to do since I work overseas all the time. Bla bla bla.

Yes, you’re talking about Adam at peddling pizza, he has two original dual fuel domes! I think if you’re gonna use gas and you want the bigger oven, the S1 has a little bit better igniter, and burner than the original dome, but the new arc burner and igniter is even better than that

I think its time to get rid of my Roccbox and get the 14 inch version of the new Arc :) Something to think about. Only problem is you need the stands as well. so I doubt they will stop making the roccbox because its still amazing and portable and right out of the box you are set. You cannot buy an Arc without the stand, At least for me. Its a match :) 3 days left for a decision :) Great video!

Hey George, you can technically use it without a stand. It just won’t be as high as I typically like it you could always set it up on something like some paving stones or bricks I agree the box is much more portable, but the 14 inch arc is actually just a few pounds heavier so it’s still pretty easy to carry around. It’s just not quite as portable.

I live in a cold climate and have a dome. In between pizzas the temp goes down pretty significantly. I use the nu2u door to bring the heat back up quicker.

Would be nice to see a comparison of the time to heat up, cooling down after cooking a pizza and how long the bases hold heat etc

The great thing about Gozney ovens are that they’re all very good at heating up, and retaining heat because they use commercial grade amounts of insulation in very thick stones. Obviously the smaller ovens heat up a little faster, but the minimum for good pizza is 30 minutes with the dome and the larger ovens. I usually give it 45 to 60 minutes to assure the stone is 850°F Minimum they take many hours to cool down. I usually don’t put the cover back on until the next day.

I got the Gozney Dome last September for a KILLER deal, but I didn't use it until this past weekend. My only complaint is that I wish it could easily fit 2 pizzas.

Hey, great video. Thanks. I’m in dubai and we get butane cylinders here which people normally use with their bbqs and so I was wondering if this would also work on the arc. All info I read just said propane but really looking for a hack here

You will have to contact a local gas company to see what they can do, butane in theory should be compatible since it is also a LPG like Propane but you should also confirm directly with gozney

Yes, absolutely, it was very well packaged and yes you will need to pay over sized fee but it should be fine checked in. These will be on sale in Europe so i am not sure where you are located but might be easier to order from Germany or the UK, etc.

Thank you so much for this video! If you were to compare just the burners and the way they produce the flame, is the arc that much more superior, or is it just a horse a piece? I can see that the burners for the Domes takes up a good chunk of real estate!

From a purely flame aspect they are not that difference in terms flame output, the main differences are like you said, it gives you about 3 more inches of usable surface space having it recessed into the side and also the pilot and ignition are much, much better, The arc is a one click and lit oven whereas the original dome takes a few minutes to get the pilot light to light and them to kick on.

I haven't tried the Gozney Arc XL, but based on experience, I think for catering pizza business, the Gozney Roccbox is still better, specifically two Roccboxes over the Gozney Arc XL (it's too large of an opening, without an arch and doors... It loses a lot of energy and seems to be designed for home use as a response to some other ooni ovens, which are certainly inferior to Gozney).

I have lots of questions still 😢 To preface, I own two big green eggs. I believe you’ve convinced me that I don’t need wood ability. I love that I can light the egg and get it up to 400 degrees faster than I can preheat my oven. I use my eggs 3-6 times a week. I primarily want to do pizza on weekends. But on weekdays I do sourdough, wings, cast iron skillet meats and veggies, fish, sausages, anything else. This is usually done on the eggs or inside in my oven. I would like to know how to best REPLACE my indoor oven? Meaning? Bags of lump charcoal for the Eggs gets expensive and I want the ability to fire up a gas oven and get moving. I believe the answer to that is the dual fuel Dome. But… I have cracked numerous plate setters and fire rings in my Eggs. A non serviceable stone piece scared me. With the newer tech in the Arc XL, and the removable stone, and the idea that I mostly want the ability to use gas, makes me want to want the Arc XL instead of a dome. But I’m worried it won’t do all I want. This video also made me nervous to buy a Dome and then have a new and improved dome come out 4 months later… 😭 Help.

The internet NEEDS to know. What’s different inside the s1 vs the dome. Why couldn’t you put a fire tray inside the s1!? Granted you need to cover the gas burner and you don’t have airflow control. (No different to a normal pizza oven). Thankyou for this. Just bought the s1 - probably because of your video. Didn’t realize just how much smaller the arc is. I don’t doubt the arc does a good job, but I like the aesthetic of the dome for my space. How dumb is that decision making haha.

Apart from looks is there really any need for the s1 over arc xl. Appreciate there is slightly better insulation but for home use not so much of an issue. I prefer the look of s1 but they should of put the new tech from the arc in there at launch as it seems a hard justification over price of the arc to warrent the purchase. The height using a standard US 20 pound tank is 12 inches from the top of the tank to the bottom of the oven and the recessed part has two circles, one’s a 6 inch for a standard US tank and the other outer ring goes up to 12 inches in diameter. It’s designed to fit either a standard US 20 pound tank or a standard UK tank

Yes, 10 mm thicker is a significant difference, the S1 will definitely retain heat better but it really depends on how you’re going to use it if you’re just making a few pizzas for the family it’s not that big of a deal but if you’re cooking 10 or more or using it for a giant party, and it starts making more of a difference

Have you cooked on an Alfa oven. I'm considering the Alfa Moderna 2 or a Gozney Dual Fuel Dome. I know there is a price difference. Do you have thoughts on how they compare otherwise?

I would put Alfa a step above Gozney, but like you mentioned it comes at a price, it's going to be almost $1,000 more. If you do go the route of Alfa i wouldn't get their table / stand, i don't know why but they make it standard counter height 36" which is nice for the table part but it's way to low for the oven and the oven opening isn't high enough. I do think i like the burner on the Dome better, it's a more traditional style burner. Long story short, the Alfa is a bit better quality but it's really in a different league, the Dome is still going to be the best under $2,000 above this price point there are quite a few contenders but Alfa is very nice.

Given the 3 Gozney models and you were upgrading from the Rockbox, would you choose the original? With the Arc XL+, what would compel someone to buy the original? Is the original the most versatile? It is as almost Gozney evolution has singled out the original for extension. You having all the models, is the original still your go to? I’d like to hit the button on the original but not sure having the wood option compelling enough to buy but I’d appreciate your thoughts.

It's kinda of a misconception that using wood for Neapolitan pizza gives it a wood smoke taste. for Neapolitan you need the oven and fire super hot at around 850F when a wood fire is this hot it burns very clean (If using dry wood) so there really isn't much if any smoke, and the pizza is only in the oven for 60-90 seconds. Wood is great, and fun to use if you have the time to manage the fire and are going to be cooking enough pizzas to justify the extra time and effort. Even the AVPN now approve gas ovens. So long story short, I wouldn't recommend wood fired pizza making unless you do it once in a while just for fun for a couple pizzas or you buy or build a large stone oven that retains heat for days, none of these smaller home ovens are worth the effort to use wood over gas. I really like the DOME S1 (Gas only) it still has the style of the old DOME but has an improved igniter. I like the looks of it better than the Arc. but not sure if it's worth the exta $ over the Arc, the arc has a nicer burner and temp gauge and is easy to move around. They all make great pizza so it really comes down to which style you like best. Please use this link if you decide to purchase one, it really helps out my channel! Thanks

Gozney is amazing when it comes to featuring chefs culinary presentations with the org Dome and Rockbox. Will go forward and acquire , eventually, the org Dome but I suspect Gozney will upgrade the org Dome with Arc XL+ features. Again ty for your time and excellent channel.

I honestly think it will be about the same, You might want to consider the Arc 14", i think it it will heat up and recover even faster than the XL. The main improvement with the Arc ovens is going to be the burner location and being able to adjust the flame without reaching your arm behind the oven all the time.

Would you think buying 2 of these would be good for my pizza food truck business? I currently use the original Dome and the stone zaps out on me around 30 or so pizzas. My thought process is to buy 2 Arc XL’s and alternate back and forth. I also have a back porch on my trailer so venting isn’t an issue. Thank you.

On another channel someone tested the recovery time of the Arc. Based on that video it seems the recovery time is 45 seconds to a minute. So let's say you are doing 2-minute cooks. Add 1-minute for recovery. You could then in theory do 20 pizzas an hour.

Personally i like the look of the Dome more than the Arc XL. Really comes down to if you want to spend more $ and have the space for a larger oven. The dome SL is going to take up quite a bit more space and be a lot heavier and harder to move around but like I said, I think it’s a better looking oven. At the end of the day they both will make amazing pizza, so it really is going to be a style preference

Hey Matt, I got my oven!!!! This is my first Gozney pizza oven. I picked up the Arc XL and Stand this past weekend. I followed the instructions for mounting the oven to the stand but all 4 feet have about a 1/4 inch of wiggle room in any direction if you pull up on the oven. The center locking bolt is fully secure and you can visually see that the bolt is fully and properly threaded into the center of the oven. Is this normal? Or should the 4 feet fit snug and not budge at all? The instructions say not to overtighten the bolt. Does your Arc sit on the stand without any wiggle room? I even tried removing the oven and rotating the front and rear of the stand. The locking bolt is as tight as possible but you can lift any corner of the oven to the point where you can almost see the bottom of the rubber foot. I appreciate any feedback you or your viewers might have.

Yeah that doesn't sound right, mine wiggles a bit but not enough for the rubber feet to come out of the little indents. sounds like something might be missing, did you put the little 1/4 inch plastic spacer between the bottom of the oven and the top metal plate, the screw goes up through the top of the stand, then through the plastic spacer then screws into the bottom of the oven making it snug.

I watched your unboxing video of the Arc and you were the only one that included a clip of mounting the oven to the stand. So I figured I'd ask. The feet don't come out completely but seems like more than what is intended. I don't think it would actually pop off the stand, but I was expecting a firm seal since the feet are rubber. I may try threading the bolt deeper through the spacer before putting the oven on the stand. Thanks again for trying to answer and respond to everyone. This is my second question with a response on this oven. I really appreciate your channel.

Hi, does the steam injector work in the dome S1 version? In making pizza, does the stone on the dome s1 get cold after making a pizza? How long I need to wait to cook another pizza. I have a small pizza business and that’s very important for me to know.

The steam injector doesn't work for the S1 Version and no the stone doesn't get cold, with the burner on high it gets back to full temp in less than 1 minutes, so by the time your next pizza is ready to launch it will be back to temp.

The stand doesn't fold up at all, you can fold down the 2 side tables very easily but to load it into a car / van you would need to remove the oven and then place the entire stand it fully assembled. Might be better off getting a folding table and the booster.

I'm in. Fourth comment. Just reserving my place. Now, on to the video. Will edit afterwards. (30 minutes later...) Great video! Here's a highlight: There's an update on how to obtain a discount code when the oven launches. Although I'm set on getting the Arc, the fact that the Dome can be used to make bread and that the Dome can be used as a smoker with low and slow cooking gave me pause. I'm still going to go with the Arc, I decided, because I have a kind of feeling I can hack the Arc and/or tweak the Arc controls to make bread and to go low and slow. For example, I'm thinking I can saturate the Arc with heat, then turn off the burner and let the oven temp drop to say 650 F, put the bread dough in, then drape a blanket over the oven to insulate the oven and prevent loss of heat through the opening. Hopefully the exterior will be cool enough so that the blanket doesn't char, or worse, combust. A far as a mantle for the Arc: it may not be pretty, but I might put some firebricks near the front in such a way that the temp reader is not obscured too badly and adjust the height of the bricks with cardboard shims till I get a shelf at the mouth of the oven that lines up with the floor of the oven and doesn't leave too large a gap at the opening.

This is ridiculous, I actually keep coming back to watching this video, and I still cannot decide!! I cannot quite understand why today you would choose the S1 over the Arc XL. But even once the S1 is updated with the Arc features, why would you choose to spend that extra $500 for the extra weight and insulation. I am stuck between the black and bone color of the Arc XL. I think I have also realised that I gas is just so much more efficient for quick mid week cooking. I think I saw on another review that the minimum temp for the Arc once warmed up is 500 degrees F. This information has helped me decide to get an actual slow cooking smoking BBQ like the Masterbuilt.

The main reason someone would choose the S1 would be the style and size, you can make 2 Neapolitan pizzas at once in the S1 and only 1 in the Arc XL other than that you are correct, if your just making pizza at home the Arc XL is a great option. For BBQ a smoker and or pellet grill is still going to be the best method, Neapolitan Pizza ovens are designed for 1,000F super hight heat and like you said all of the better quality ovens will have a minimum cooking temp around 500F the less expensive ones with less insulation and lower output burners will have lower heats, etc. I would only recommend these ovens if your primary objective is to make pizza.

Technically, you can convert it, but it might require a new burner because natural gas requires a lot more pressure than propane so you’ll have to have a gas expert either put a pressure gauge on your natural gas line to increase the pressure and replace the burner with the natural gas burner

The Fontana ovens are going to be another level up, they are on par with Alfa ovens and are both extremely well built but they are at least double the price. From a pizza making perspective The pizza you can make in a dome will be equal so you really it comes down to which style you like better I think for the price the S1 is better than the Margherita but if i were going for a bigger dual fuel and budget wasn't an issue than i would def. consider the Napoli or an Alfa oven. When you get into the $5k range you really can get a stone or brick oven that is world class but those are extremely heavy and are not going to be portable.

I have the dual-fuel version on the excellent Gozney cart. I absolutely disagree with your assessment of effort required to roll. I find it very easy on my deck. I can imagine that it takes more care and effort on a flagstone patio. But two people -- no way. Also, the odds of needed to take it off the cart and move it are slim and none. It is a two-person job to put it on or take it off the stand, I'll agree with you on that.

On flagstone it catches and i have almost had mine tip oven when rolling several times but yes i can move it by myself if needed but it's not as easy as the S1 or Arc for sure. I mention the taking it on and off part because a lot of people ask me about fitting it through a standard size door to store it inside when not in use and on the stand it wont fit.

I'm sorry to say I've had two RMAs which means I've had to have my neighbor help lift my Dome onto the cart three times and back into the box two times. Next time you move the cart, push lower on the cart vs. at the top to avoid the chance of tipping. Also, complain to the person who laid your flagstones that they did a crappy job because if the level of the flagstones is so poor that you catch the wheels on the stones, don't blame Gozney. BTW, some feedback on this video. No one is going to remember all the measurements. Create a table for crying out loud so that people can review it at their leisure. Point out the salient points that are memorable. I watched to the end and I couldn't repeat a summary of the main differences between the three models and who is the target customer for each one. There is a difference between "data" and "information". You were long on data and short on information. Also, what is special about a "Neapolitan pizza"? You kept using this as a reference point. The salient point is pizza diameter, not how the pizza is constructed. You could put a 12" naan in the same space as a 12" Neapolitan pizza.

It’s a great home pizza oven but if you’ve never used a Neapolitan pizza oven, there is a bit of a learning curve. The most important part is learning to make good dough!

19:50 Strange. In our small pizza community we feel the difference in favour of wood fired. And strange as it may seem, electricity is better than gas:-). True, it's not worth firing up the oven for two pizzas.

Thanks for watching Joe. Don't get me wrong, i love the artistry and romance of cooking with wood, it's just the efficiency or lack there off with these smaller metal ovens. The end goal is to also have a large stone or brick oven which i will for sure use wood in.

No but the stone is removable, Pro's and Con's with Biscotti are that they are very fragile and crack, break and scratch easily so really only ideal for Neapolitan pizza. I have someone working on a test Biscotti stone for me to try in this but Biscotti stones have to be a min. of 1" thick or 25.4mm which his 5.4mm thicker then the Arc XL current stone so the Biscotti stone will be a bit higher than the factory stone.

Wood fire in pizza cooking is not about getting smoke flavor into the pizzas. That would taste terrible. Smoke flavor in meat in a smoker is delicious, but not for pizzas. But there is a huge difference in moisture and humidity. Think about a wood stove and dry heat, compared to a propane heater like the “Little Buddy” and the terrible moisture and humidity it puts in the air. The wood stove with wood fire is hands down better. I think the same concept can be applied to pizzas. The gas is incredibly easier and does do a fantastic job at cooking pizzas, but the intangible charm and quality of real wood fire cannot be dismissed. More work but worth it if you are not in a rush and want the full experience. Having both options is very nice, but you’ll get lazy and end up using the gas version every time(trust me I know😊). It’s just too easy and the pizzas come out great. I’m just an old school romantic and I love the real thing!😊

Have to agree with you there, I will eventually buy a larger stone oven which will be dual fuel and with it using wood is much easier and for the same reasons you mentioned, it's more of an experience.

One of the things clearly never advertised about the dome is it is NOT insulated in the ceiling which is what matters. That's the most critical part of insulation but that's where the steam injector goes, and it drips watter into the ceiling and the steam enters the oven. That's a huge problem. The S1 and the Arc should not have this design flaw. For making pizza it might not be a difference, but for heat retention there will be a clear difference.

Go to 11:10 in the video it show's the insulation in the top of Dome, it actually has around 2" of insulation in the majority of top and the top back where the steam injector is, is actually packed with insulation around 4". The steam injector pan is actually located under the insulation and the interior stainless steel.

@@HarplandProductions yeah not exactly like I expected, but most of the top does not have insulation. Air is not an effective insulator if it is above a certain thickness. it doesn't look too thick, but it is definitly thicker than ideal. If they chose to forgo the "dome" design with the ventilation being in the front and exhausting out the top (in the gozney dome) it would be better. It looks like the arc xl is more optimized for cooking pizza and has design improvements. From what I see, 2x arc XL ovens is better than 1 dome S1 oven. Arc XL with biscotto would also be comparable to offerings from pizza party which have always been a good value.

@@user-ke2up6mr8t the ventilation is actually in the front right above the door of the oven. The hot air circulates in the oven goes to the door goes up through the vent along the top of the oven, then out the chimney on the top, so it actually keeps the top of the oven warm

​@@HarplandProductions maybe it does but from my perspective I see heat just bleeding out the uninsulated metal top and then going out the chimney. This is not a problem while baking pizza but when doing retained heat applications like bread. If you look at an oven like karu 16 it has very thin insulation, but at least it has some. That means that when the oven is off, it does retain heat better than the dome does. Because it doesn't vent in this way.

@@user-ke2up6mr8t yes, I agree these ovens do not compare to a stone or brick oven at all but compared to the karu these ovens retain heat 100 times better, it’s hard to even compare in my opinion. The dome with the door will retain a heat for 4 to 5 hours after you turn the burner off.

I agree, a brick and or stone oven would be far superior. The major drawback of brick and stone ovens are that they are permanent installation and for me I don’t want that. I want to be able to move the oven around so I can clean my patio or when we have parties or get together sometimes I need to move the oven to make way for bigger tables etc. if I had a stone or brick oven I wouldn’t be able to do any of that so it’s more about portability. The ovens I have are the best of both worlds they cook amazing pizza, but I can still move them around

I have had the smaller Valoriani that is dual fuel for years. I have never used wood. It is a great pizza oven BUT it takes forever to heat up because it is brick and the dome is much higher. The maximum temperature after about 1 1/2 - 2 hours is about 750 or so degrees. I also have a Roccbox. I typically cook maybe 2 pizzas at a time or a couple of steaks/pork chops. Chicken too. Guess which oven I use 95% of the time? The Roccbox. If I was starting out now, I would get one of the Domes over the Valoriani. Since I have the Valoriani, I plan to “upgrade” to an Arc XL to give me a bit more room inside the oven than the Roccbox and the new side burner. We each have different use cases for our pizza ovens, it’s nice to have such a variety of choices. ❤

They do send me pizza ovens at no cost, but can't really say it's free when i have to spend almost a week of my time after work developing, filming, editing and uploading each video all, for, "Free" in reality they are the ones making about like bandits getting way more visibility than the price of the oven, that's why they do not charge me.
