I watched an Asian gardening program yesterday and was so surprised at how they are all cramped in high rise dwellings, but grow an enormous amount of their food. It was obvious, they didn’t have much money, but they reused plastic bags to garden in, they hung gardens and utilized egg shells to grow seedlings in. They reused boiled vegetable water to fertilize vegetables and cut tomato plant cuttings and other food plants to make more plants. People really need very little to grow food. They saved their seeds and made their compost for growing more food.

I'd rather grow Iceberg lettuce myself since it's difficult to transport and store. I just like the taste even if it's poor in nutritious value - that's why I add herbs, sprouts and baby leaves to compensate whenever I'm hungry for some Iceberg. =)

Wow so sad to see some of these replies have been negative. One can also teach their neighbors how after sharing the extra. You can't eat money but sure exchange, barter, sell, there's also nothing wrong with that, but being indignant, certainly, will make you less dignified.

Potatoes, carrots, rutabagas, beets, turnips, parsnips, and other root vegetables can be stored in a root cellar in wet sawdust or sand. Some people can them, which preserves them for much longer. Tomatoes can be canned. Cucumbers can be made into pickles and can be lactofermented or canned in a brine. Cabbage can be lactofermented and made into sauerkraut. Turnips can be lactofermented and made into sauerruben. There are a number of channels that teach how to can food and others that teach how to lactoferment.

I found some tomatoes popping through the soil this morning and was just thrilled! I've had gardens forever so it shouldn't have been such a big deal, but with the world the way it is, it's good to have something beautiful starting out, something to think forward about. Plant and pray, wait and hope! 🌱

I burst out laughing at "12 plants of garlic is all you need". I think i use that much in a month, for two people. So I asked my american husband "don't y'all eat garlic over there?" and he replied that down South they do, occasionally. Me, I can't bake a cake if I don't have garlic in my pantry. I admit, I am from Transilvania...

I'm with you! 😃 We eat *tons* of garlic, but I'm also 100% Hungarian. I can use a whole bulb of garlic in a pot of soup. Our bodies need the sulphur from them and other alliums.

Sure. I use garlic in every savory dish. Even tripling that count would only get us three months of garlic for my family... But my dear friend only ever uses garlic on spaghetti and garlic bread... Nowhere else.

I learned something new. I learned why I'm so stressed during harvest season while the weeds take over. From your calculations I growing enough to feed apx. 20 people (there are 2 in my house). Also explains why I am having trouble finding room to store it. I guess there are worse problems to have

mary CBS news jane I’m trying deep wood chip and compost no till gardening. Several years ago I did it and had hardly any weeds. It also cut down on watering. Less stressful for sure. Best wishes.

@@mrs8792 I put down news paper from end of rolls and keep about 8 inches of grass clippings on top(grass and irrigation water both bring in plenty weed seeds).The biggest problem with thick wood chips(yes, I've tried it) is I have LOTS of morning glory aka. field bind weed which loves the wood chips. My nephew got a state grant years ago to study using bugs to control weeds. They found a weavel that only eats field bind weed only problem is it takes several years fir the weavels to get to critical mass to kill this weed.My property is too far north for these bugs to live through the winter. Therefore the cold kills them and they can't reform their majic

A good addendum to this would be a video on how to schedule succession so that you have that 10-20lbs of a given plant ready for harvest over the time you'd take to eat it (IOW, not all at once).

Got my seats today. I was so shocked when they were so many seeds in those packs for a dollar. Great value if you’re on the fence about buying their seats do it you won’t regret it. I’ve never had any problems with their seeds. So this year I branched out and bought different. Can’t wait to get in the garden and get them growing

A word of caution: Kale is very high in vitamin K , known as the clotting vitamin because without it, blood won't clot properly. If you are taking blood thinning or anti-coagulant drugs, like warfarin (brand name Coumadin), you need to avoid large amounts of kale.Mar 25, 2013

That's actually a myth, both potatoes are nutritious sweet potatoes are higher in vitamin A whereas normal potatoes are higher in potassium. Sweet potatoes also contain more fat than regular potatoes and they contain 14x the amount of sugar than regular potatoes. 👍

For the lettuce/spinach substitute, I found a PERENNIAL leafy rhizome called Pacific Waterleaf. Prefers the shade to utilize those non-sunny places and the leaves can be eaten fresh or cooked. The rhizome is like crunchy bean sprouts. And it's prolific so don't need to buy much. Purchased from Native Foods Nursery.

You can also dehydrate most of these veggies. Then storage space is not such a problem.🤓

In Michigan, with a short growing season, a couple could use two 20 feet by 60 feet in dimension hoop houses to grow enough food for the both of them plus have extra to sell at farmer's markets. I purchased your book and I'm glad I did. Up North, in Michigan, we plant after Memorial Day. We get many of our plants and flowers from a nursery in Glennie. I grow tomatoes, rhubarb, apples and potatoes. In the summer, we gather huckleberries that grow all around our cabin.

I am curious if you figured this out. I started smaller and planning a much bigger plot of land for next year. I don't have any room to store 150lbs of potatoes (3 adults) so I will likely still have to go to the store for potatoes. Also need to think of how you will store the food, freeze, can, cold storage? I hope you have good luck

I still filled all my freezers,( I have 3) and still do not have enough for a year. I'd imagine it would be a full time job to be completely self sufficient. Possible but not practical.

I'm a year late, but I would guess you could have a small idea by re-watching and adding the space he says for each crop. That being said, I think this number varies a lot by what types of varieties you get, how good is your soil, and how efficient your gardening skills are. For example, those cucumbers, peas, and tomato plants don't have to take a lot of space if you have good trellis. If you know your crops you can succession plant, like you lettuce won't take that much space if you wait to harvest some before planting new ones. Same goes for all varieties. You have broccolis that take 50 days to maturity and others 80. You will need a lot more space if you plant only the ones that take 80 days, but you can have some 80 days along with some 50 days that you will succession plant and be able to harvest broccoli for 100 days. It's gardening so the math is not always perfect, but I think thinking this way makes it possible to grow a LOT more in a lot less space.

We love fried potatoes and onions as a main dish. I would always use peppers and it would add tons of flavor to the dish. We like things like sautéed squash and onions. Ham, yams and apples! Roasted pumpkin and then roast the seeds for a great snack!

I absolutely loved this video & I especially loved “ if your only eating 2 lbs of kale, you probably should be eating more” lol. We’re a family of five ( vegans/vegetarians) & we eat kale almost daily 😂 smoothies, soups, wraps, salads, juicing, just whoa! So many options! Also I agree with the dry beans, I’d need to at least triple that for us. I think it’s wonderful that you speak strongly about consuming more fresh fruits and veggies in abundance.

I am Whole Food Plant-Based and I was shocked going to the grocery store the week after the panic shopping when there were no beans, potatoes, rice, frozen vegetables, oatmeal, etc at any store near me. I might not grow things this year, but I am learning this year. I don't have a big space, but I am aware that vegetables are so expensive and that they are what I eat. I am quarantined right now and I do have some greens, but it will be likely that I end up with 3 weeks without greens unless I go to the store. My coworker tested positive, so I am not going to the store.

That is a great list. Other veggies to consider are cabbage (i prefer nappa/ chinese), snow/sugar/sweet peas and more root veg like turnips/parsnips

I don't like beets, but I love rutabagas, so I swap the two. I eat a good amount of cabbage and snap peas, too. One great thing to do with cabbage (and kale) is to dehydrate it and then store in quart mason jars - throw some into soups or whatever else you want, or rehydrate and throw into your stir fry.

Thanks for the inspiration. I am planting a garden for the first time in several years. I had the main part of my back yard disked so that I could plant a food security garden. I've created 11 30' rows thus far and have about that many more to do. I'm thankful every day that I am physically able to garden. No more excuses. I'm a healthy 67 year old with two hip replacements. I'm growing several kinds of beans, okra, tomatoes, cucumbers, peppers this summer using succession planting of at least two crops of each and then plan to have a fall garden of the cool weather crops. I am so grateful and excited to be back in the vegetable garden again. I won't be caught totally dependent on the supermarkets again as long as I am able to plant and harvest! Happy, productive gardening everyone. Yes, I'm using some MI Gardener seeds!

You can grow fresh vegetables on a porch, deck, patio. Not a year's supply, but real fresh stuff. Can grow in vertical towers which can be taken inside during cold weather, using led growing lights.

Sharon Stanley did you try to move a tower indoor? It is very heavy. You might keep it on wheeled caddy, but a strong one. It helps to move along the deck. But to move in a house you usually need to go overcome some obstacles, like steps or door boards. That’s not easy at all and you can end up with a big mess and lost crop

lol, I can munch on 2 lbs spinach in 2-3 days, I might go throw about a pound of leafy greens a day so these numbers are so small. I'm not vegetarian but still supprised just how little veggies (and variety) people eat.

I love starting seeds and seeing them sprout! I have a very simple system to start anything even super hot peppers. Great soil, some water and decent temperature is all it takes.

Thanks for that list! My husband and I have been trying to get a garden going for the past couple of years, and haven't had much success. I'm hoping the tips and tricks from you videos will help us have a bigger yield this year. I can't believe the amounts needed. We definitely will have scale back because we have 7 in our family and not enough space to grow all that. Being able to save money from buying from the grocer will help though.

I had watched one of your older videos talking about building an economic raised bed for under $50. Wow I love that video .so much great information as always. I had a honeydew melon that was just so magnificent that I had to remove the seeds dry and germinate them. I Put them in a plastic bag with a wet paper towel and in about 10 days almost all had sprouted. Planted and Now in my grow light area, they are growing beautifully.

Great info as per Luke. Raising more plants than the annual requirement can produce an excess that can be 'canned', such as tomatoes for example, as whole or reduced to passata or puree. The same goes for reducing an excess of onions into onion jam, or making vegetable soups in large batches for canning. Being able to grow more than the annual requirement is something i'm striving towards this year.

For maximizing garden space, look into square foot gardening and also vertical gardening. Both are great ways to grow lots of food in limited areas.

Literally compiling a google doc of this list for future planning! ♥ Sadly I can't get all of this planted where I'm currently at and have to limit to just growing supplementary veggies to help take the load off of what I have to buy at the grocery store, but it'll be a lovely resource for if I ever move to somewhere that has the room to grow everything or if a friend with land needs some planning ideas!

Thank you for your hard work! We understand that this is an average. Some people, like you said about dried beans, will need much more than that. The effort you put into this well really help me to SEE about how many plants I will need to at least get by! It has been so wet here in TN, that potatoes have had to be held back. Don't want them to rot in the ground. I don't have any raised beds, YET! I was wondering if you had any information on sweet potatoes, or are they about the same as regular potatoes? I've just always planted in rows. Like 4 rows of potatoes, just never thought about square foot gardening. Then I saw the square foot planting gig on Living Traditions Homestead! Where has this been all my life?!!! I see a greenhouse and raised beds in my future! Thanks again! GOD bless
