Consider selling the eggs with the kids at the farmers market. Great little business lesson. I have chickens & you are going to have this “Egg Issue” until winter. Your freezer wont be able to keep up. Consider donating to a food bank, if they are set up to accept fresh eggs. Great lesson in giving for the kids as well.

@@mamabee2151 I worry about salmonella more with grocery store eggs than home-raised hen eggs. Cramping chickens in barns and creating stressful environments for them cause diseased eggs. The U.S. is probably the only developed country that washes protective blooms off eggs. Our mass-manufacturing processes cause more illnesses than small homestead farms.

As always thanks for sharing your life with us. When I was a kid (70 years ago) - sooo old. My mother would make the kids favourite lunch treat with the excess eggs. Curried egg sandwich - at least 2 boiled eggs per kid, mashed up with mayo, salt and curry powder spread onto home baked bread - yum! I’m Australian so I don’t even know if you guys have curry powder. In Australia kids are not allowed to take eggs to school for lunch as some other child may be allergic - not sure how my siblings and I didn’t kill the entire school but after 12 years at school before university I can’t remember one egg related death.😂 Have an eggcellent week 🇦🇺🦘

I only have 13 chickens & I get at least 20 every 2 days. I absolutely adore my chicky babies, I take alot to church & give away to people & I do sell some to those who want to buy them ❤🐣

Here in 🇮🇹 Italy we use to make a lot of pasta with extra eggs, then freeze it, when you need it it can go from the freezer straight to the boiling water 😄 Thank you for the great tips!

Let your noodles dry out and you can keep shelf stable or freeze them for ready made noodles. That is how my grandmother used her surplus eggs.

Have you considered preserving your eggs in lime-water? It keeps the eggs fresh for up to a year and you can store them in five gallon buckets with lids some place out of the way. It is a decent way to store large amounts of eggs without using up valuable freezer space. Because they are still in their shells and unfrozen they are very convenient to use. Pull a dozen out of the bucket in winter towl dry them pop them in a carton and put them in the fridge whenever you need them.

I freeze eggs in snack size zippered bags. 2 or 3 in each bag. Not scrambled. Simply dumped in the bag & each bag gets marked as to how many are in each one. They fit perfectly in a plastic shoe box size tote to lay them all flat on top of each other. They thaw quickly & snip the corner of the bag to squeeze out. This has worked well for me for many years. Most summer days we collect around 90 eggs. I must preserve them for lower production seasons! Happy cooking!

Definitely use silicone liners for your muffin tin or a silicone pan, for easier removal. I also scramble them in a bowl and then.pour into the tin. It's messy scrambling them in the tin.

Great ideas! Myself, I make a lot of quiches that i freeze whole after baking. When defrosted they are like fresh. Also banana breads that I freeze as well. They feel and taste fresh too. Also freeze dry. 6 dozen eggs make one half gallon mason jar and they last for years that way. I also exchange produce with a neighbor as they have a huge garden but no chickens. Win-win there. I give some and I sell a some and still we get a lot from the hens now days. We get a dozen and a half every day.

You could put a little kiosk down by your property gate with an honor jar. The kids could take part. I like the muffin tin idea. Does freezing them change taste or consistency at at all? And Daniel always entertains.😊

I make frittata with all our eggs. It's nice and simple, and it doesn't use pie crust! I use a 9x13 pan and put potato puffs, frozen red and green peppers and onions, pepperoni and breakfast sausage in the bottom of the pan the pour an egg cream/milk mixture over it. I use about 15 eggs. then sprinkle shredded cheddar cheese on the top! Bake at 350 until cooked through.

You can freeze a perfect “baking portion” of eggs using breastmilk bags. We are swimming in quail eggs so we will be doing that very soon

Love the idea of freezing eggs in the muffin tins. I make lots of noodles with my excess and use them as christmas and birthday gifts--no one has ever complained! Two of my friends prefer this gift and return the container for refills.

Try water glassing it preserves the eggs for a very long time and you don't have to refrigerate or freeze. Something to look into 😁

Water glass, Freeze dry, freeze, dehydrate…keep the shells to dry them & crush to scatter in yard to boost calcium for the hens; to boost in garden…

Your pasta bring back memories of my mom making homemade egg noodles. She'd straddle wooden spoon handles over wide bowls and hang the noodles to dry, then cook. So good.

Egg custard tart is a great way to use up a lot of eggs too - a good dessert. Then also add egg to your pastry instead of using water - makes a richer dough and is very tasty.

Have you ever thought of making custard? It is delicious….soothing when you’re not feeling well, and uses a lot of eggs and milk. Some sugar, (can add raisins) and sprinkle w/ nutmeg on top. Bake in a water bath in the oven and dessert for the family.

!!!! Silicone molds are great for freezing eggs, once frozen pop them out and throw them in a bag and place back in the freezer

We’d call the puff pancake a ‘Yorkshire pudding’ here in the UK. We have them as part of a roast dinner with clear gravy. My neighbour has 8 chickens and so we benefit from their bounty! They’re tiny and so are the eggs, bred for their looks not their eggs but they lay so well, at least one a day from each of them at least almost the whole year round

Using muffin tins was genius. My grandparents had a herd of cattle and a flock of chickens. My gram would make us what we called egg pancakes, most people call them crepes lol. It was another great way to use up eggs and milk. Blender curd is another way to use alot of eggs. Lemon and lime curd is so good on toast or in pie. Thanks for sharing your family of helpers and your egg ideas. It always inspires me.

Put a sign outside the gate “ farm fresh unpasteurised eggs FOR SALE and undercut the nearest supermarket price 👍job done. With freezing, sharing with family and 7 children that should help the egg glut. Your girls are really learning and helping❤️

The muffin tin sections are great as you can also put 2 eggs in each and have the correct amount of eggs for many baked items.

Have u ever tried water glassing ur eggs so that u can use fresh eggs throughout the winter? Three Rivers Homestead has a how-to video on it that is excellent. U might be interested in it.

Salt-cured egg yolk is a great way to preserve your eggs. Place yolks into a bed of salt and allow to cure in the fridge or in a cool dry place. You can grate them like cheese over most any savory dish.

I love freezing extra eggs when our hens lay a lot! I haven’t had any issues with defrosting them when I freeze them in freezer bags and lay them flat. Like you, I defrost ahead of time in the fridge, with a rimmed baking pan underneath.

I do not have near as many eggs as you are getting, but sometimes we get tired of the eggs too. When that happens I feed my dogs eggs a few times a week. Dog food is expensive too. Doing this gives the girls (all my dogs are female) some good food too.

My grandmother and her 10 siblings grew up on a farm with chickens 🐓 and they made drinking custard when they needed to use up eggs. It’s delicious! There’s a lot of stirring but you can delegate.

I scramble about 3 days worth (16 or us) of eggs in a quart mason jar then freeze. I freeze the jars without the lid on and then cap the jar once frozen. Takes up less space, and I get to have my muffin tins for baking. I thaw in the fridge and just use the ggs as I normally would. Seems to do well.

Hi Lisa! I freeze mine in the muffin tins too with the salt or sugar and they turn out great every time! Great way to "preserve" eggs!

have a friend who puts eggs in a 5 gallon bucket of some type of brine...they will keep for a year....said when they compared a stored one to a fresh one, it was just as good.... I had never heard of doing that... always learning.... 🌻⚘🌻

It’s called waterglassing! And it is calcium hydroxide (lime) that is in the water to preserve the eggs!

Great tips! I've seen Becky at Acre homestead freeze dry her eggs. She then showed reconstituting them, ans blind taste test with her husband. "Tastes like fresh eggs"

Becky at Acre Homestead freeze dries some of her eggs and stores them in a mason jar. You can use the freeze dried eggs to make scrambled eggs or use them to bake but no fired eggs, no fried eggs would be an issue for me

More than 100 years ago (before refrigerators) the old timers preserved eggs by "buttering" them. They would smear soft butter all over a freshly laid egg and store them in the root cellar. In the cooler temps the butter would harden, sealing all of the tiny pores in the eggshells. A buttered egg would keep for 6 or 7 months like that. They say the buttered eggs tasted good since a small amount of butter would leach into the egg, flavoring it. It took care of two problems: Too many eggs from the chickens and too much cream from the cows. That's how they enjoyed eggs through the winter, when the hens went on strike and refused to lay any fresh eggs.

Another idea, I've heard of people putting a layer of mineral oil or Vaseline on their eggs and storing in the fridge for months ❤️

Well thank you lady! I had a way to much and was gonna give them all away to friends and family but hey I froze a bunch and will again a few times still have plenty to share but this winter I will ration a little less! :)

What a great idea... I freeze soups and stock in silicone muffenpans, works a treat and great portion size! It's a game changer for sure but never thought to freeze eggs!! Thanks much!
