■ Soboro cookies
25g…butter
25g…Granulated sugar
40g…Flour
① Cream the butter that has been brought to room temperature and add granulated sugar.
② Soak the butter in the flour by sifting it out.
When it becomes smooth to some extent, rub it with both hands and make it into a minced shape.
③ Chill the minced cookies in the refrigerator until they are baked.

80ml…Water
salt
40g…Flour
110g…Whole egg

◇Preparation
・Spread a 12cm x 9cm pie sheet thinly and prepare 6 pieces with a 9cm celcle.
Make 8 cuts in a 9cm pie sheet and arrange them on a baking sheet.
・ Sieve the powder
・ Beat the whole egg
①Put water, salad oil and salt in a pan and bring to a boil. Remove from heat.
② Add the powder to the above, mix the whole, heat it up until a film forms on the bottom of the pot, and transfer it to a bowl.
③ Add the beaten egg to the above
When you lift the spatula, the dough should remain in the shape of an inverted triangle.
*The amount of eggs used may vary slightly depending on the condition of the dough.
④ Fold the 30g squeezing cut in a spiral shape on the pie sheet arranged on the baking sheet.
⑤ Paint the remaining beaten egg on the whole
Top with soboro cookies and bake in a preheated oven.
*Be careful not to open the door after putting the dough in the oven until the baking is finished.

60g…egg yolk
40g…Granulated sugar
20g…Flour
250ml…milk
Vanilla beans
① Add the granulated sugar to the yolk and mix until it becomes whitish.
② Add soft flour and let it blend into the whole.
Add milk and vanilla beans to a pan and combine with the boiled egg yolk
Put it back in the pot.
④ Thicken over medium heat.
Initially it is a liquid, but it becomes more and more concentrated and heavy.
Be careful if you quit here because the powdery smell will remain !!
If you mix more, the concentration becomes lighter and the whole patissier becomes shiny.
⑤ Add the cream cheese that has been returned to room temperature, and when the whole is smooth, put in a container and cool.
◆ Claim Diplomat
Add 20% fresh cream to creme patissier.
Let the patissier's koshi fit into the whole like cutting fresh cream
Mix gently from the bottom of the bowl.
