Heya, check out binging with babish's recipe - he browns the butter, then solidifies it in the fridge afterwards before creaming it with the sugar, as you would with standard butter. Stops the spread and helps with the texture - really the best of both worlds IMO! Get the roasty nutty flavour but not the oily flatter cookie texture.

Yes indeed, I like Babish, been watching since his first videos on reddit! Definitely meant to put the brown butter in the fridge, but Olivia was hungry for cookies and couldn't wait :P I've improved my cookies a lot since this recipe, though I often forget to brown the butter :P Oddly enough, the best recipe is the one on the back of the Tollhouse cookies packet, the original choc chip cookie recipe. It's just so good!

I found mixing in the chocolate first to the butter/sugar mix makes it easier to get it all in the dough. then the mixing of the flour helps distribute it.

If you add the chocolate into the butter/sugar mix before adding the egg, you don't get a chance to properly aerate the egg mixture, which is one of the most important steps to making an airy, delicious cookie! Also, the irregular nature of the chocolate distribution is one of my favorite parts, as I really enjoy occasionally getting a bite with TONS of chocolate, and then another bite with only a little bit and mostly cookie :) Thanks for your comment :)

Which one? Top two shelves are the housemates. The one with all the tiny bottles are two different types of homemade hot sauce! Actually going to be doing an article about that soon :)

For the brown butter cookie, how do you get the butter thick and fluffy after mixing sugar and egg?

The trick is to just REALLY beat it using an electric mixer with the padle attachment. It incorporates lots of air, which helps the cookie be more.. cookie like.

A very late reply but you can also cool the butter back to a cooler temperature to have it solidify a bit again.

I believe the recipe I used was a variation of this recipe: foodwishes.blogspot.com/2010/06/welcome-to-summer-of-amena-and-her.html But also kind of Babish's cookie recipe: ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-ylxzfecackM.html honestly though, cookies are kind of a base thing for me, in that I don't really need a recipe, just an idea of what kind of variation of themes I'm looking for :)

I liked this experiment. I’ve tried both ways but unfortunately my brown butter cookies spreadddddddd like a volcano lol so I definitely don’t prefer it.

@@paulyou4629 ...some things just don’t work for everyone so obviously this was a trial & error situation captain obvious. Cookie recipes take a long time to perfect if you want it to come out a specific way. Which I did. I still said what I said I didn’t like it nor prefer it that way. There’s different ways to use similar recipes.

@@TheCRYSTALLURE you hafta let them cool for an hour before baking, and don't flatten them, and use higher heat (like 375), shorter time (depends on cookie size). Hope it helps.

@@deenad3562 I bake a lot of cookies. I always cool my dough for 24hrs & I don’t bake them that high. I prefer my own temperatures according to my household. Not all ovens have the same temps. And I never flatten my dough. So while your tips are well intended. You’re also assuming a lot of things that I didn’t do. It’s best to ask first. I already know what works for me vs what doesn’t.
