Friendly Cooking Tip: If there's water in the pan that's what causes the oil to pop as it heats up (same if you get some drops of water into hot oil). I usually keep the empty pan on the heat for a couple minutes to make sure any water evaporates before adding oil :)

The oil splatters because the pan is wet. Try drying the pan before putting in the oil next time. Turning off the heat and putting in the meat is also a bad idea as the meat will absorb more oil

8:04 The oil in the pan was popping because oil and water hate each other.🤣 If you heat oil and drop droplets of water in the pan the oil will startpopping. And Evelyn had previously used it to measure the chicken broth. Even if she did wash the measuring cup it would be wet. So the water droplets in the cup will mix with the oil. In essence oil pops when with mixed with (even the slightest amount) liquids like water, and then heated/fryed.
