Question: what is the point of the "first boil" and then moving the ingredients to basically plain water? I could understand a parboil of the bones, but do not understand the logic behind this technique. Anyone?

Linda S. because vegetables are soft they take little times for cooking process.First we boil bones so that all nutrients came out .Then that boiled mixture is added with vegetables.

The Chinese take a blow torch and singe the hide black. Then they scrub the burnt skin off and commence cooking. Same reason.

No, just leave it for doggies instead.. There isnt really any eatable meat on those legs, just skin and fat, and the doggies would enjoy such treat alot more But great video 😊
