This is a caramelize egg recipe that is usually made with pork instead of tofu. It is sweet, salty, and savory. It's a wonderful balance. The tofu is interesting though, I will try it out. Hard to get fresh palm sugar around here but it's delicious and has a lower GI than brown/white sugar.

AnnaKev Tofu will taste like whatever you cook it in. It absorbs the flavor of your sauce or vegetables. It basically has no taste on its own.

I don't know about this kind but the stuff my mom uses really has no flavor until added to something. Like a salad. It tastes like the salad dressing she used. I didn't like it but my favorite salad dressing is vinegar and oil. The tofu tastes like vinegar. LOTS of vinegar and I hated it. I am curious about this tofu. I have never seen it in our stores but I guess I would have to go to an Asian store to find this. I just might do it. No vinegar though. Lol.

Brown sugar or molasses will work fine if you can't access palm sugar.

Just do not use as much brown sugar because it is a lot sweeter than palm sugar

Palm sugar, fish sauce, garlic, salt...balances out real well. I'm assuming the amount would surprise most westerners though. On matters eggs, I can't quibble your sentiment. Them eggs are burning in the afterlife.

It looks like a lot of palm sugar but it's really not coz it melts in heat and appears so. For the quantity of eggs and tofu she has added it isn't really a lot. Especially that tofu has no flavour of its own.

The secret is not overcooking. I always do 10 minutes from the time the water starts to boil. Just my guess.

When eggs are boiled drain the hot water and pour on cold water immediately let them cool before peeling and they will shelled real nice.
