Cooking Easter Meals as Russian Orthodox | Traditional Food in Russia

This year Easter in Russia will be celebrated on the 2nd of May according to the Orthodox calendar. I decided to cook some traditional Orthodox meals for this holiday in advance and show all the process to you so you'll be able to cook them too!🌼

🔸Recipes in details:
🍞KULICH
Ingredients:
(for approximately 6 medium sized kulichi)
Milk - 0.5l
Butter - 200g
Eggs - 8
Sugar - 400g
Flour - 1.5kg
Vanilla Sugar - 1 tablespoon
Yeast - 11g
Decor
Raisins - 400g
Salt - pinch
Process:
1. Heat the milk a little (so that it is slightly warm), put the yeast in it. Add 500 grams of flour and stir well. Cover with a towel and put in a warm place for 30min. The dough should double in size approximately.
2. Separate the whites from the yolks. Mix the yolks with sugar and vanilla sugar. Beat the whites with a pinch of salt until foamy.
3. Add yolks to the dough and mix. Then add softened butter and mix. Add whites and mix.
Add the flour (you may need a little more or less flour), knead the dough. The dough must be kneaded well, it should not be steep and should not be sticky.
4. Put the dough back in a warm place for an hour to get bigger again. Soak the raisins in warm water for 15 minutes, then drain all the water. Add raisins to the dough, mix and put about 1/3 of the dough in forms, cover and put in a warm place again for about 20-30min.
5. The dough should rise well. Put it in the oven preheated to 100 degrees, bake for 10 minutes. Then bake at 180 degrees until tender and ready. To check the readiness of the cake, pierce it with a match (or a toothpick) - if it is dry, the cake is ready.
6. For the glaze, beat 2 egg whites with a pinch of salt until foamy. Add 100 grams of sugar, beat until firm peaks. Put on top of the ready-made hot cakes with and sprinkle with decorations.
🍮PASKHA
Ingredients:
Cottage Cheese - 500g 9-18%
Sour cream - 250g 30%
Sugar - 150g
Butter - 100g
Vanilla sugar - 1 tablespoon
Eggs - 3
Raisins - 100g
Nuts and candied fruits - optional
Salt - pinch
Cheesecloth or gauze and form
Process:
1. Blend cottage cheese with a hand blender for a smooth texture. Cut butter into cubes and leave in a room to soften. Soak raisins for 15min in warm water and then drain all the water.
2. Beat eggs with sour cream and soft butter. Mix with blended cottage cheese.
3. Put the mix in a pot or a metal bowl on top of the bigger pot with water and then put everything on the heat. Boil on a small heat till cottage cheese will be hot, stir often.
4. Put the damp cheesecloth/gauze folded in four layers into the Easter form and transfer hot cottage cheese to this form. Cover with free ends on top and place it under oppression for at least 24 hours. Use a container or a plate for the liquid that will be released.
🥚COLORED EGGS
Ingredients:
White chicken eggs
Onion skins (for red/brown color)
Turmeric (for yellow color)
Red cabbage (for blue or purple color)
Salt
Vinegar
Oil
Process:
1. Take eggs out of the fridge. Boil onion skins and cabbage leaves about 15-20min and turmeric about 7-10 min. Turn off the heat and let everything cool down.
2. Add 1 tablespoon of vinegar to turmeric and to cabbage if you want to get a blue color (if you want to get a purple color don’t add vinegar to cabbage ). Add 1 tablespoon of salt to all the decoctions.
3. When liquids would be cool enough put eggs in them. If you keep skins and cabbage leaves inside the water you may get stains on eggs. Heat up again and boil eggs for 10-11min. Turn off the heat and leave eggs for an hour in decoctions.
4. Take out carefully and grease with oil for shine.

Thank you for making this video on traditional Easter dishes. I am a first generation Russian American and have been eating and enjoying this all my life! They are the true flavors of Easter. For the cheese Pascha, the cheese we use in America is called farmers cheese, which is what you call cottage cheese. Cottage cheese here is something different, so I just wanted people to know in case they make it. Wishing you and your beautiful family a blessed Pascha!

Farmer's cheese can be found at European specialty stores, but I think it's closer to ricotta cheese if not mistaken. Romanians have a lot of the same traditions, even we non Orthodox Christians do.

Book of John, chapter 13, verses 34, 35 we are commanded to love all, this young family seems to know this with the openness, honesty and a sense of loving us all with what they share. We call "kulich" cozonac and paskha în similar, the onli thing that is different is that we put it în oven and we coll that delicious thing pască.( I am Romanian)

I was raised Catholic as well. When I was young, we had an Eastern Orthodox Priest conduct service once and their beliefs and practices are really the same, they just don't see the Pope as the leader of the church due to a history of a complicated break with the Catholic Church.

My mom used to always make paska bread for holidays. We always put butter on top though but she was not russian, but polish.

My mom is from Chuvashia and dyes the eggs the same way (Shes Russian Orthodox). Here in America we are used to the bright artificial food coloring though so growing up I didn't like it when she tried. I'll have to let her do it her own way next time and appreciate my culture more lol. I was born on Easter Sunday(the Christian version of Easter). :)!

I love the fact that you also use Dr. Oetker, I love their products. And we have a typical bread of Italian origin very similar to the first recipe in Brazil, it's called panettone and it's a Christmas recipe. Though many people do not like it with dried fruit and prefer the chocolate version.

My family immigrated to Canada from Ukraine after WWII. My grandma always made the bread recipe but we actually called it Paska! We of course also did the coloured eggs. So cool to see part of your culture 😊 Good job cooking!

On an unrelated note the new mortal kombat movie was filmed in SA! - from a fellow aussie (QLD here - the aussie dude in the film - well the one who was allowed to keep his accent 😂 is also a qldr! My kids are Mexican and Native American, their pediatrician told us that I would need to speak English to them, and their daddy would have to speak only Spanish to them for them to be bilingual... they only know Spanglish 🤣 but I wish we would’ve listened. Being bilingual in America is an asset ♥️

yup, lots of jobs prefer bilingual specially english/spanish. other places like medical also like russian. but i think it depends on the area, if the city has alot of a specific people speaking their language is a great thing to have as an employee. but generally russian english and spanish are great languages to have if you want go get hired easy. plus if you're into travelling, being able to speak 3 languages is great for flight attendants cause they get bonus money that way.

My parents only spoke Greek to me growing up in America, and I didn't learn English until I got to kindergarten. Kids learn languages really fast, so they would have been fine if the kids' dad spoke only Spanish to them.

@@klaudinegarcia8932 don't worry you're not missing out, tagalog is practically worthless. If you go to the philippines like manila, most of the people can understand english, so you don't actually need tagalog. If you go outside of manila into more provincial places, your tagalog will also be worthless because there are 70+ other dialects they are probably going to speak. Cebuano, ilocano, etc. So speaking english is basically all you need, if you find yourself in a place where they can't understand ENGLISH, they probably won't know tagalog eitherway. even the poor people who speak tagalog usually will understand you if not, someone else nearby can translate, they will respond with broken english but it wont be hard to understand because their speech is minimalistic, you can just assume what they are trying to say based on the context of the conversation. EX: if they respond with " Oh yes fish eating me in the restaurant over there very very good" obviously they don't mean the fish in the restaurant was eating him, what else could he mean other than he ate the fish in that restaurant and its good. as long as you have common sense and can rule out what they are probably not saying. you can survive

In Bulgaria we also color eggs on Easter and we bake Kozunak, that is similar to Kulich. I've never heard about Paskha, it was interesting to learn something new!

In USA we also color eggs the night before easter. And then on Easter Sunday, the adults will hide the eggs around the yard and house, and the little kids will try to find them (easter egg hunt). And after the easter egg hunt, everyone will eat the eggs.

This is amazing. When my grandparents were alive we did these things because they were orthodox Christians from Ukraine. Now I want to do it next year !!! Good memories. Im in canada so we already did our easter two weeks ago. But i miss these traditional things. Thank you for sharing

Thanks for your video! I thought that making kulich is much more difficult 🤔 I've preapared pascha by myself once or twice, just because of curiosity. It was never been cooked in my familly for Easter before, so I decided to try. It turned out delicious, everybody enjoyed eating it 🙂 I added a lot more dried fruit and also some nuts 👌🏼 Greetings from Poland!

Exciting for me to see people who celebrate Orthodox holidays! My mom is Ethiopian and is Orthodox too but the one big difference is we don't really do sweets for holidays- just coffee and popcorn 🙂

We have similar foods in Romania for Easter too and especially the way you made the eggs reminds me of how my grandma does them! I cannot go home this Easter due to the pandemic and the video made me very happy 🥰

In the US, most of are milk is in containers, but I saw a RU-vid video recently where a family in Utah bought their milk in plastic bags, which I had never seen before.

@@arolemaprarath6615 Yes, there are several rites of the Catholic Church, the largest of course being the Latin rite. There are Byzantine rite (like Ruthenian), also Melkite, Maronite, etc. who are in communion with the pope of Rome (I would disagree about this particular pope being holy, however)

I find your videos interesting, informative and a delight to my heart. My Grandparents emigrated to the US in 1910 and our family has been making Paska and Kulich every year since that time. I continue the tradition and this year have purchased the mold and baking sleeves that you show in your video. I love seeing your take on the Russian life as it is today. I have a long essay written by my Aunt, who interviewed my Grandmother’s sister, that details the Russian life as she lived it prior to her immigration. Fascinating comparison. I visited Russia two times in the last decade and my experience was enlightening. The restoration of buildings, churches and monuments left me speechless and gave me many memories to understand my heritage. Thank you so much for giving me a picture of Russian life as it is today.

I actually really like the color pallet with the eggs! The white and red and Robin's blue egg with the gold turmeric eggs make a very classic/retro color scheme that I really think is super cute!

All Easter dishes have to be cooked on Thursday. A lot of people carry Kulich and coloured eggs to the Church at Saturday for blessing. And this prepared food will be eaten at Sunday morning. Sunday ends the Lent which lasts for forty days. So people break the fast and can eat eggs, meat, fish, milk and dairy. The Lent is the most strict fast among the others Orthodox fasts.

I’m an Orthodox from Romania. We also have Paskha (Pasca in Romanian), but it is actually a mix of your Paskha and Kulich: it is made from a dough similar to the one you made for Kulich and it has a filling of cheese and raisins. We also have Cozonac, which is made from the same dough, but with a filling of cocoa, walnuts, raisins and/or Turkish delight. I love your channel, I have been watching all your videos! ❤️

Vintage appliances are the best, they were built to last. I have a coffee maker from my nan, it's at least 30 years old. It's never let me down or given me any problems. It works perfectly fine.

My mum and grandma also like to put different leaves or flowers on the eggs when coloring them, so the part where the leaf was stays white and the egg has a beatiful pattern. Greetings from Czech republic, love your channel and your videos.

These looked great :) Yeah, in the USA we celebrate according to the wrong calendar 😅 I think the Catholic church pretty much just adopted the same dates as pagan holidays and replaced the celebration with Christmas and Easter early on, and now it's just tradition here and in the West.. but I would love to celebrate Easter on May 2nd, according to the Orthodox calendar! Ive not seen vanilla sugar like that before! Wow cool! Im not sure why foreign food packages are so fascinating when its the same food inside but its so fun to see! 😂 usually you have to make it yourself or you just use vanilla essence and sugar seperately. 😊 Is vanilla sugar common in russia or russian cuisine? Can you easily buy vanilla essence by itself or do you prefer to use it as flavoured sugar? I wonder what else is available at your supermarket that ive never seen before 😄

Vanilla sugar is very common here for baking☺️ I’m not very into cooking so I don’t know much about it and it was the first time I bought it actually😂 So I don’t know about vanilla essence to be honest.

We had Pascha for the first time in Rome (at the Russian college) 8 years ago. It was so good, we hunted down the recipe six years later in the United States and now make it every year. Christ is risen!

Easter Sunday is the Sunday following the Full Moon that falls on or immediately after 21st March. Whilst most Western countries adopted the Gregorian calendar many years ago, Russia continued to use the Julian Calendar until after the Revolution of 1917 when 31st January 1918 was followed by 14th February 1918 - which is why the October Revolution (Julian) is celebrated in November (Gregorian)! The Orthodox Church continues to use the Julian Calendar, and 21st March (Julian) corresponds to 3rd April (Gregorian). The Full Moon following that date occurs on Wednesday 26th April (Gregorian) this year so Easter Day is the Sunday following, 2nd May 2021. The difference between the calendars is that the Julian Calendar has a leap year when the year is evenly divisible by 4 , but the Gregorian calendar has the additional rule that a century year must be evenly divisible by 400, not 4. So all centuries are leap years on the Julian calendar but 1800 and 1900, for example, were not leap years on the Gregorian calendar.
