Tripes never struck me as the most appetising dish on the menu. i reckon given enough time i could knock together a half decent dish with it though. You could make it palatable by giving it the Calamare Romano treatment. although I'm sure these villagers have acquired a taste for it.

I don't eat it,but have a suggestion for how it clean?dip it in one cup vinegar and 4tea spoon salt,and hardly hands wash,for 5 minits it,it's bad smell wil finish.
the black thing is a part.. it cant be removed.. and u never going to taste this amazing dish..cooked by using pot..its amazing.. village people only can feel this..

The best way to eat goat intestine is to cut it in small pieces along with goat's liver, lungs, kidney & heart then fry it well. then eat it along with beer, vodka, whiskey or maybe local :P
If u r going to clean stomach, dont cut into smll parts. it will take more time .. so better that black part, dont cut.. can remove that layer by hand. and white one its like hose, pls put your knife or scissor and cut into 2 parts horizontally.. easily can remove its dirty..
may be its disgusting for some people but every one can see naturality of the food and without chemical contain that is not found in the most of countries
