Start by rolling out your Puff Pastry (1 box comes with 2 sheets) I buy a big salmon from Costco; season it W/ S&P. Lay it on the first sheet of Puffed Pastry. Sauté fresh spinach (Costco) with some diced onions and minced garlic; once it has wilted down layer on top of salmon. Add shredded Greyer Cheese over spinach mixture. Cover with your second rolled out sheet of puff pastry. Bake 350/30m. Let completely cool wrap in Saran Wrap, place in ziplock bag and freeze. Just unwrap at campsite and warm up in foil or cast iron skillet. This feeds a lot of people so you can easily cut the salmon in half and just use 1 sheet of puff pastry. The prep is only about 15m. And bake for 30m. Truly a family favorite for years and it also has been a Christmas and birthdays tradition….its impressive, delicious and takes very little time to make.
We take a second cooler which is just drinks and quick grab and go snacks. It helps keep the kids out of my food cooler, and that keeps things frozen longer
Ha! We do the same thing. We also freeze some of our water bottles and put into the food cooler and drink cooler so that we can use the water and not just melted yucky ice. Smaller cooler for foods and a larger cooler for the drinks.
Freezing pancake batter in a ketchup bottle is genius! I usually just make the dry mix ahead of time but freezing it sounds even easier! I'm just starting to meal plan for our camping trip next month. Thanks for the tips!

Didn't know you could freeze pancake batter, Great to know!! Also, eggs are totally "freezable". I crack all my eggs into a ziplock bags (a bag per meal so you can thaw as you need them *double bag*) and I freeze them flat. I don't wisk them before freezing ONLY because some of us like sunnyside up eggs. They thaw out wonderfully.
We crack ours and put into water bottles and I write on the bottle how many eggs are in each bottle....Freeze. But i love your ziplock bag suggestion. That will take up way less space in the cooler!
We make chili and then freeze to use as ice cubes. We also will use food to freeze.. but that batter in a ketchup bottle is amazing. I am totally doing that!!
Amy here... changed my name from fun house to my actual name. My kids had made my RU-vid name years ago and never knew how to changed it.. lol Another thing I do as a treat for kids when camping is they get juice boxes. The only time I buy juice boxes so it's a treat for them. So I will freeze them as ice packs as well. Well also will make fajitas. Cut up the peppers, onions and add cooked chicken to a ziplock. Add some water and seasoning and ready to freeze and then cook over a fire. Another treat for our family that we only get when camping is potatoes in a can!!! They are so good but I will never buy them for eating at home. So camping treat (which goes back to my childhood. Only time I got them was camping). We also do a big camping trip in the summer (7-10days) and then a 5 day camping trip late September.
@@amyt7537 Mmmm...fajitas! Great meal idea :) We are going to try doing Qeusadilla's over the fire this summer. Kind of a similar idea. Camping really IS a great time for those "treats" that we don't normally do at home.
Pre cook and freeze foil meal packets. You can easily make breakfast and dinner foil packets. I line my foil with parchment paper though and place my food on parchment paper. Freeze your water bottles and place in a drink cooler with your other drinks. You can also pre cook spaghetti and meat sauce and place in food saver bags and freeze. Then boil the bag in water to reheat, or place in whatever cooking pot you like. I love meals camping that are no mess and no fuss, ready in minutes.
My husband and I have a trailer but meal planning totally helps us not overpack! For meat, we'll buy in bulk, separate into vacuum seal bags and add a marinade, then freeze (zesty Italian salad dressing or any vinaigrettes for chicken, steak marinades for steaks, etc...) then the meat is seasoned and it's pull and go 🙂
If I'm not mistaken, I think you can even freeze scrambled eggs in an old creamer container (as long as it is 3/4 full). Just make sure they are scrambled and add 1 tsp of salt per cup before freezing. I'll be trying this before camping to make sure it works.
