Cooling Jowar Salad (HINDI)

On Episode #6 of #HaayeGarmi where I make cooling recipes for the summer season, I am making this super nourishing and cooling Jowar Salad.
You will need:
For the Dressing:
-1 1/2 tbsp Olive Oil
-1/2 tsp Cumin Powder
-1/2 tsp Paprika Powder
-1/2 tsp Salt
-Pinch of Black Pepper
-1/2 tsp Chaat Masala
-1/2 tsp Jaggery Powder
-Juice of 1 Lemon
For the Salad:
-1.5 cups Cooked Jowar (Sorghum) Pearls
-1 Cucumber, chopped
-2 Tomatoes, chopped
-1 Onion, finely sliced
-1/4 cup Mint, roughly chopped
-1/4 Cup Parsley, roughly chopped
-2 tbsps Vegan Feta Cheese (Can use regular feta cheese too if that's what you prefer)
-2 tbsps Roasted Almonds, chopped
-Garnish with Roasted Almonds
Method:
1) Rinse out 1/2 cup of Sorghum Pearls well till the water below is clear. Soak this for 6 hours and then rinse again. Cook in a pressure cooker with 1/2 tsp salt and 1.5 cups water.
2) In a bowl, mix all the ingredients of the salad dressing together.
3) In another bowl, mix all the salad ingredients together.
4) Mix the dressing into the salad bowl and garnish with roasted almonds.
