Recipe here: www.joyofbaking... Stephanie Jaworski of Joyofbaking.com demonstrates how to make Cornbread. Cornbread, warm from the oven, is such a treat. It has a lovely golden brown cracked surface with a crust that is nice and crispy, yet inside the texture is soft, dense, and crumbly. Some like to serve it with their meal, instead of a yeast bread. It also makes a nice accompaniment to soups, stews, and salads.

Everytime I'm in the mood for something specific to bake, I look at RU-vid. I watch a few videos and study their ingredients and for some reason I always end up choosing JoyofBaking. Never fails! Love all the videos.

My favorite way is to eat this bread is warm from the oven. But it will keep two to three days at room temperature. Or you can refrigerate it.

My first attempt at cornbread and it has turned out to be great. I love the way you have explained how to customize between the cake-like and bread-like by varying the flour vs. cornmeal and also the regular milk vs. buttermilk. Your confidence helps to make these recipes idiot-proof and that's what a rookie like me needs. :-) Thanks so much.

This was the best! I used 2 cups 100% cornmeal flour, 1 cup of whole raw( Im very lucky to have access to this) milk, and 1/2 cup yogurt. Also tossed in some slivers of jalapeno pepper and scallion. Unbelievably good!!!! Great with a big hot steamy bowl of pinto beans on newyears day! Thank you soooooo much! Happy Newyear!

Thank You Stephanie Yaworski! I like your presentation. Very helpful information and demonstrations! Special thanks for the tips: 1. 1 tbsp vinegar & milk sitting for 10 mins. in place of buttermilk; and 2. for clearly giving the ingredients and adding ideas like seasoning with Rosemary, cumin or cheese. Very nice of you!

No. White corn meal is not the same as cornstarch (corn flour). At least here in America, corn meal can be either white or yellow. While yellow corn meal seems to be more popular, I really like the flavor of white corn meal.

@joyofbaking
@joyofbaking 8 лет назад
Cornmeal is made from white or yellow corn kernels that have been ground and dried. If some of the germ and hull are included in the cornmeal, it is called 'stone ground' cornmeal. Cornmeal, when used in baked goods, adds a slight crunch and gives it a coarser texture. Cornstarch (called corn flour in some countries) is the starch derived from the endosperm portion of the corn kernel. It is often used as a thickener.

i love how you say play around with it as that is exactly what i did as i remember corn bread being very savory tasting but i only had it once from kfc in america so forgive me for sounding presumtious i added celery salt ,garlic powder, onion powder, pepper (black) , caenne pepper and paprika to try that more savory taste and it was lovely. by white corn meal do you mean corn flour in the uk we have corn flour (used to thicken gravys by mixing with a little water) and corn meal which is yellow?

You could buy some corn meal from Amazon (dot) com they have it in their grocery section. Unless they can't ship to Mexico, I'm not sure about that. If you're talking about Masa I'm pretty sure it's different than corn meal.

I don't understand this adding flour. I am from the south and we always made it with self-rising cornmeal, an egg, and equal parts of buttermilk and water. Cornbread means cornmeal bread made with just cornmeal. Not flour or sugar.
